Cherry Pancakes

Good morning,

It’s Sunday, did you have a good Saturday?  I didn’t do to much, but I had a nice day!  As we speak were watching the play offs, so glad San Francisco won!  Woohoo!!  Go San Francisco!!

I started my morning off with a wonderful breakfast, as usual I was craving pancakes!  It seems to be my weekend breakfast, I have no problems with that!  No one was home so I took my normal recipe and cut it in half.  If I made the whole batch I would of eaten them all!  That would not of been good!!

They look good don’t they?  I actually made a batch of these last week, and I wasn’t happy with the cherry sauce I made, so it needed a re-do and this time they turned out perfect!!  But before I give you the recipe, let me finish talking about my day.


I went to Target and bought allot of Valentine’s Day treats, it’s so fun buying stuff with hearts.  I’m such a sucker for anything heart shaped.  I have some ideas of recipes, so we shall see how it goes, you know I’ll keep you updated.

I also went grocery shopping at Trader Joe’s, shut up, you know I’m a Trader Joe’s fan.  I just wish they would turn the heat up in that store.  Is your Trader Joe’s freezing inside?  It was actually warmer outside, 54 degrees, then in the store.  Can you guess what I am going to make with what I bought?  If you know tell me, because I don’t know.

It’s so nice to get paid, I was running low on key ingredients.  There’s some new stuff in there that I haven’t tried yet.  I’m going to update my Trader Joe’s page, so you can catch it all posted in there.

I am sure your expecting this for my lunch today.

Yup you guessed it a Buffalo Chicken wrap made with my Buffalo Wing Hummus.   I added some blue cheese yogurt dressing by Boathouse and it was perfect!  You don’t even know how happy I am with my hummus.   Just look at this wrap!

It’s 1/2 a Lavash wrap, 2 Tbsp. Buffalo Wing Hummus, 2 oz of Trader Joe’s Grilled Chicken, 1 Tbsp. Blue Cheese dressing, romaine lettuce and tomato slices.  So perfect!!  The salad is just mixed baby greens and Whole Foods Fat Free Balsamic dressing.  Calories for the wrap and salad:  199,  Fat:  4,  Cholesterol:  43,  Sodium:  443,  Potassium:  75,  Carbs:  19,  Fiber:  3,  Protein:  19  Not to bad for my wrap!!  You have to make one.  Make big ones and slice them and serve as an appetizer.

Ok, I bet your wanting to see more Cherry Pancakes.  There so dam good!  I can’t say more then that!!   There so good, I’m half tempted to go get more cherries tonight so I can make them again tomorrow!

I have to say making pancakes are so fun, I just wish I had a griddle.  I use a small skillet and it’s a pain in the butt trying to flip them over!

This would be so perfect to serve for Valentine’s Day morning.  A little breakfast in bed?  Maybe a little whip cream, wink wink!   Hey, where is the whip cream?

Ahhhhh, that’s better!  Come on, you knew that was coming!  I swear I go through a can of whip cream a week.  I need to make this stuff myself!  But it’s only 5 calories for 2 Tbsp. and I don’t think I could make that!  I’m afraid I’d like the real stuff better!

Cherry Pancakes for One

Ingredients:

1/4-cup greek yogurt, non fat , plain

1 egg whites

1/2-tsp almond extract

3 Tbsp. whole-wheat pastry flour

1/4-tsp baking soda

1/4 tsp sugar

Dash of Salt

1/3 cup whole cherries, pitted, cut in half or in quarters depending on size of cherries

Cherry Sauce:

1/2 cups cherries, pitted, cut in half

1/4 cup pancake syrup (I used Mrs. Butterworths sugar free syrup)

Directions:

Mix greek yogurt, egg whites & almond extract into a small bowl

In a separate bowl combine flour, baking soda, sugar, & salt

Combine and whisk till evenly mixed

Fold in 1/3 cup cherries

Place 1/4-cup batter onto non-stick skillet and cook till bubbles start appearing through the top of the pancake and then flip. NOTE: Cook on medium heat and I flattened out my batter with the spatula to cook more evenly.

About 1-2 minutes on each side

For sauce:
In a sauce pan add 1/2 cup whole pitted cherries and maple syrup. Set temperature on medium, and when it starts to simmer, set the temperature to low and cook until thick and bubbly. It’s done about the same time your pancakes are.

Serving Size: 3- 4″ pancakes

I’ll take those calories for that!

These pancakes have a lot of cherry in it!  If your a cherry fan, you will LOVE these!  I am thinking dark chocolate pieces would be good in them too!!  Yes, please!!

I just made a big batch of Butternut Squash again, and I have one of my Butternut Squash pizza’s in the oven, so I better get going before it burns.

Have a wonderful Sunday, now go, I mean run to the store and get the ingredients to make these pancakes.  Hmmm, wonder what I can create for tomorrows pancakes?
