Cookie Dough Balls III

Hi Guys!

Well it’s Thursday, were almost to Friday!  Yah!  I’ve been trying to keep a positive attitude, but sometimes it’s hard!  That can be really wearing on a person!

Well tonight I can’t write to long, since I still have dinner dishes to do, make lunch and I would really love to make some hummus and since I peel those darn chickpeas, it takes me forever.  I pick tedious tasks!  Why I don’t know?

Speaking of tedious tasks, I made wonderful little Cookie Dough Balls that I got from Oh She Glows.  I discovered Oh She Glows, reading a link to a magazine and so I clicked and I was hooked.  I wanted to know why she glow’s, so I signed up for her blog.  Angela’s blog was the first blog I ever read.  I had no clue what a blog was, then I starting clicking and realized there are people out there like me, who had struggles with weight, loved to eat, cook and seemed like genuine real people. Angela’s blog is a Vegan blog and I’m not Vegan, but  I have tried several of her recipes and my family and I love them.  Angela’s blog showed me different types of food to try, such as hummus, black beans, multi-grain rice, wheat berries, granola and more.  I never heard of most of these foods, nor never tried them.  Actually I just never thought of them.  I now incorporate all these different foods into my everyday life.  Whether your Vegan or not, you should check her site out.  I’m so excited for her, she is working on a cookbook and I can’t wait for it to come out, I will definitely be buying it.

The first thing I ever made from Oh She Glows are these Chocolate Chip Cookie Dough Balls.  I was hooked then, and I’m hooked now!  They really do taste like little chocolate chip cookies.


I made these on Sunday and as I write this, I just popped the last one in my mouth!  I’m sad now!  These only take a few minutes to make, but the tedious part was my fault.  I made these balls super small.  I got 49 of them out of my batch.  I do this because I have no self control, I’ll just keep eating them and if there bigger they’ll go faster.  Plus, I like to open the freezer and just pop one, two or three in my mouth!

I think I really loved this last batch, because I made peanut butter, and I thought what the heck, I’ll just make cookie balls without cleaning the food processor.  Best non cleaning idea ever.  These taste like peanut butter chocolate chip cookies.  My Husband who doesn’t like foods like this, loved them and had the nerve to ask me for some.  I didn’t want to share, but I did!  I gave him one of my 49 balls.  🙂

Whats nice about these, is that you freeze them on a plate then put them in a freezer bag.  Store in the freezer and because of the fat from the cashews, it doesn’t freeze, they kind of melt in your mouth!  Yum!

Cookie Dough Balls III – Oh She Glows

Yield: 1 cup packed cookie dough

Ingredients:

  • 1/2 cup unsalted cashews
  • 1/4 cup rolled oats
  • 1/4 cup whole wheat pastry flour (other flours may work)
  • 1/2 tsp kosher salt
  • 1.5 tbsp natural cane sugar
  • 1/2 tsp pure vanilla extract
  • 3-4 tbsp pure maple syrup (or a bit more if dough is too dry)
  • 1/4 cup dark chocolate chips

Directions: In a food processor, add the cashews and oats and process until it forms a fine crumble. Now add in the salt, sugar, and flour and process for a few seconds more. Add in the maple syrup and vanilla and process until combined. It will be sticky, but this is normal! Add in your chocolate chips and stir by hand or process. Form into balls. Store in freezer.

I am not giving you the calories on these because Angela doesn’t count calories anymore and I feel it’s best to not say, but I will tell you it’s a guilt free snack!

I hope you get your food processor out and try these little guys!  There so addicting and oh so good!  I really want some more, right now!  Maybe I could whip up a quick batch before I go to bed.  Instead of snacking on granola this week, I’ve been snacking on these!

    YUM! I am going to make this recipe with a multi-purpose GF flour and I bet it will turn out with the same results. Love the dark chocolate addition to the balls.

    Those look delicious and gives me a solid indication I am allowed to eat raw cookie dough. 😉
    I like how you made them bite size. Although, I think it would just trick my mind into thinking I could eat more w/out feeling guilty. LOL

    Jennifer, these are perfect for January!!! I’m trying my hardest not to bake too many decadent desserts, but I still love a little something sweet after dinner. So yummy!!!

    I’ve made Angela’s balls a bunch of times, they’re delicious! I’m surprised yours lasted as long as they did. Ours are usually gone in about 24 hrs!

    Bless your heart for rolling out 49 balls! I usually make half the quantity of most recipes and/or design my recipes to cap at 20. Or 2 dozen. 4 dozen is lots of rolling.

    I love the backstory you gave about finding Angela and her blog. She’s such a sweetheart and a friend and has great recipes, too 🙂

      Of course! The peanuts will give it more of a peanut butter cookie flavor, rather then a chocolate chip flavor. I have had both and there both equally addicting! Let me know what you think!

Even though it may not feel like Spring,  there is no reason why we can’t start prepping for it. It’s going to be time soon to plant flowers, add a floral wreath to the front door and of course a welcome mat to invite everyone to your home.

Happy Monday! I did a little bit of Spring cleanin Happy Monday! I did a little bit of Spring cleaning this weekend. I wanted to give my kitchen counters the less is more look.

I did have a very hard time taking my sink tray off the counter. I’ve had the tray there for years, so I thought I would change it up. Don’t be surprised if the sink tray makes its way back. 😂 I may add some herbs to my window sill for some fresh green color.

I used @cloth.bristle to clean my kitchen counters and sink. I love cleaning my sink with it. It makes it so sparkly and smells good too! Love that it’s all natural.

Happy Friday! Our next winter storm is here! It is Happy Friday! Our next winter storm is here! It is just awful out there. Heavy rain, high winds and hail. This is not a winter that we are used to in California.

My husband and I are not fancy when it comes to eating dinner. Since it’s just the two of us, we never use the dining room table, but always eat at the kitchen counter.

There is no reason why we can’t eat fancy at the kitchen counter. I am using my new placemats that I got from @vmathome. They are thick, water, stain resistant and can handle heat up to 350F degrees. I love the color and style of the placemats. They have a wide variety of styles and colors, along with matching table runners.

I styled my table with bright spring colors that I was inspired by carrots. I still have bunnies on the brain. lol I had fun with this place setting, it’s so nice to have dinner with a little style then having it on a plain plate and paper napkins.
