Hi Everyone,
Today is day 3 of positive attitude and all is going well in the world! So far I have had 3 good days! Hmmm, I wish I realized this a while ago. At work today, which really made my day was I got to finally order a Keurig Coffee Maker! I can’t wait for it to come in tomorrow. You already know that I have a bread addiction, well I have another addiction to, which is coffee. I know I really do have issues, could be worse, right?
Then I came home did only 20 minutes of martial arts, which was kind of stinky. On Demand said it was cardio, so I stuck through the whole 20 minutes and basically he was just showing you moves and how to do them correctly, boring. After that though, I made a wonderful dinner!
I also made a a wonderful Caramelized Chicken with Jalapeno Cream from How Sweet It Is. This chicken was very good, but my pictures didn’t show up like Jessica’s. But the flavor almost reminded me of a creamy nacho cheese. I’d show you a picture, but honestly the sauce didn’t look the same, so I prefer you check out Jessica’s site. Here’s a picture of Jessica’s, so you know what it should look like. My sauce looked more yellow. Not sure what I did wrong but it tasted great!! You should also check out Jessica’s other recipes. I have made quite a few of them. I have loved them all!
I didn’t have time for rice, since I already had 3 burner’s going and not enough room on the stove, but I made a wonderful summer squash dish, that is my favorite use of zucchini. It takes no time to make, and the flavors are Muah, out of this world! I always like to make extra so I can either eat it with lunch or I can make a frittata.
This spring I plan on planting zucchini, so I can make this dish all the time. It’s amazing all the fun dishes you can make with zucchini. I love to roast them, stuff them, fry them, bake them and so on. So this summer I’ll be sharing all my favorite summer squash recipes with you. I am looking so forward to summer!
Summer Squash and Zucchini Saute
Ingredients:
1 cup zucchini, thinly sliced
1 cup yellow summer squash, thinly sliced
2 tsp of olive oil
1/4 cup purple onions, diced
1/2 tbsp Parmesan Cheese
Directions:
On the stove top in a frying pan, add your olive oil, then add your onion, squash and zucchini and stir until cooked, about 7 minutes. Then sprinkle your Parmesan Cheese.
Makes about 2 cups
Calories per cup: 73.7, Fat: 5.4, Sodium: 2, Potassium: 398, Carbs: 6.7, Fiber: 2.1, Sugar: 2.8, Protein: 1.9
This dish is so simple and so easy to make. I tend to cook my zucchini a little bit longer because my husband is not a zucchini fan and he likes it as far away from raw as possible. I don’t mind it raw, actually I put it in my salads that way. It’s such a good veggie!
One small zucchini is only 19 calories, so it will fill you up without adding inches to your waist. This green veggie is a decent source of fiber and protein too, and also contains a fair amount of potassium, which is necessary for normal muscle growth and a healthy nervous system. I was surprised to hear the slender squash is also high in vitamin C — one cup provides 30 percent of your recommended daily intake. Zucchini offers your body even more since it’s also a source of iron, calcium, magnesium, phosphate, and zinc. The peel of the green squash contains most of the vitamins and nutrients, so leave the skin on when you prepare it. – from Fit Sugar

After dinner, I walked Jenny to work, and then I ran home! It felt good to get out and run! I haven’t done that in so long! I burned a smidge over 100 calories. I did one mile in 10 minutes, which is super good for me. I guess that zucchini gave me a boost of energy! 🙂

You will LOVE your Keurig Coffee Maker-I sure do! 🙂 Coffee and chocolate are my weaknesses. The colors of the squash saute are beautiful.
We have a Keurig at home, and it is my most used appliance. i got it for Christmas last year and since then I must use it 4 – 6 times a day! I’m addicted and hooked! Yah chocolate is one of my weaknesses to! But they say a little bit is good for you! I’ll buy that!
This look great…you’re making me miss zucchini! We get it all the time in our CSA produce box in the summer but obviously not in the winter. I’ll just have to wait!
