Peanut Butter and Marshmallow Truffles

Good morning and Merry Christmas!

Today is a quick little recipe, thats pretty easy to make and if your good with melted chocolate won’t take you no time to make.  For me, it took an hour to dip my little truffles into the chocolate.  I’m still learning and trying, but all that matters is that they taste good and my family appreciates them.

I made Salted Nut Truffles for Little Jenny to take to her boyfriends house today.  I got this recipe from my Better Homes and Gardens Cookie magazine.  These little truffles are filled with peanut butter,marshmallow fluff and chocolate.  Nice combo of goodies!  They taste wonderful too!

I made half with white chocolate and half with semi-sweet chocolate.  Wow, am I messy with chocolate.  I’m going to place them in little cupcake liners to make them pretty and place in a pretty box.  I don’t have pictures of that since my truffles are chilling in the refrigerator.

With the left over chocolate I filled a little heart with half white chocolate and have semi-sweet chocolate.  I’ll give that to Jenny tomorrow.  Poor thing has to work tonight!  I can’t imagine a pizza place will be busy on Christmas Eve, but you never know!

Here’s a picture of my naked truffles before they are dipped in chocolate.  I didn’t add the chopped nuts like I should of, I was kind of lazy when I started to make these, now I kind of regret it.  But you can make them with the nuts!  🙂

Salted Nut Truffles – Better Homes and Gardens


1 7oz. jar of marshmallow Creme

1 Cup Creamy Peanut Butter

1 Cup Powdered Sugar

3/4 Cups Lightly Salted Cocktail Peanuts,finely chopped.

2 Tbsp.  Light Colored Corn Syrup

2 Cups White Chocolate Baking Pieces or Milk Chocolate Pieces

1 Tbsp. Shortening

Finely chopped cocktail peanuts or colored sprinkles (optional)


In a large microwave safe bowl combine marshmallow creme and peanut butter.  Microwave , uncovered, on 100% power for 30 seconds or until mixture is slightly softened; stirring once.  Stir in powdered sugar, 3/4 cup finely chopped peanuts and corn syrup until mixture is well combined.

Line baking sheet with wax paper.  Shape peanut butter mixture into 1inch balls.  Place on prepared baking sheet.

In a small microwave safe bowl microwave white baking pieces and shortening, uncovered, on 50% power about 2 minutes or until chocolate melts, stirring twice.

Using a fork, dip balls into melted mixture, allowing excess mixture to drip back in the bowl.  Return to prepared baking sheet.  If desired, sprinkle with additonal finely chopped peanuts or colored sprinkles,

Let stand for 30 minutes or until set, or if necessary, chill to set.

Makes about 56 truffles

Calories?  Not counting them today, sorry!  If you really want to know I’ll figure them out, but it’s Christmas and we don’t count calories on Christmas, we just enjoy ourselves!
