Good morning!
I’m writing this on Saturday afternoon because I have the Christmas party tonight and you know I will not be feeling up to blogging this evening. I did get my hair styled today and let me tell you I look like a country singer from the 80’s. lol She made my hair BIG and curly. I hope it dies down a bit before the evening.
So for breakfast this Saturday I thought I would try something a little different, and making a healthy sweet treat. Yes you can have a healthy sweet treat in one. Wait till you see it, it’s so pretty, fluffy, light and I made it Christmasy! Is Christmasy a word? It is now! 🙂 I decided to take one of my favorite cookies and turn it into a wonderful pancake! What cookie am I talking about? Nope, not chocolate chip, but a Snickerdoodle! Ahhh, cinnamon and sugar yum, yum!
Mmmmm, this is so gooooooood!!! I adapted my Whole Wheat Yogurt Pancakes recipe to make this Snickerdoodle one. Does it taste like a Snickerdoodle? I’d say yes, just a light and fluffy one. If you like cinnamon, you’ll love these pancakes! I made these for my Step-daughter and I, and I had to ask what did you think? She said with a mouth full of pancake, hhfusgjdefhjeuf good! Huh? What did she say? Thats why you should not talk with your mouth full! Needless to say, she loved them! I’m pretty proud of these pancakes.
Your probably thinking, this can not be healthy! Your wrong, with out the syrup 4, yes 4 of these pancakes come in at at just 200 calories!!! These aren’t tiny you know! Check out the little sugar sprinkles on top.
I know, how close of a picture did I take? Hey have you noticed the past couple of days, my photos aren’t so yellow (except the pancakes and the syrup do have a brown yellow tone, so thats normal)? My Husband finally put in new light bulbs, and dam there bright! There practically neon white! But I’m glad, everything looks better. Now if I get that camera I asked for, I’ll be one happy camper, crossing fingers and toes!!

I also made syrup, but I didn’t go the wholesome route that I like to take, I used Sugar free Mrs. Butterworths Maple Syrup. I added 1 teaspoon of Brumble and Brown Butter and Cinnamon. Microwaved it for about 60 seconds total time. The syrup just made the pancakes a little more Snickerdoodle like. I know real Maple Syrup would be best, but I’m trying to watch the calories,since I have that party tonight and I have been making Peanut Butter and Granola all morning and you know I’ve been snacking on that stuff! I made 8 jar of PB! Insane and two batches of a new granola! I’m debating if I should share with you now or later. It so good, I think it matches or even tops my Perfect Granola! I didn’t think that was possible! Yes, it’s just that good!
Ahhh, light and fluffy, like a good pillow pancake!! If you haven’t tried any of my Whole Wheat Yogurt Pancakes, you don’t know what your missing. Try them! It sounds weird having yogurt in a pancake, but I promise you won’t even notice! There healthy, good and so easy to make. I never tried it, but I bet greek vanilla yogurt would be the bomb in these pancakes. I’m going to try that sometime soon, I already have an idea in my head. I’m so food minded!

Snickerdoodle Whole Wheat Yogurt Pancakes
Ingredients:
3/4-cup Plain Non-fat Greek Yogurt
1/2-cup Egg Whites (I used the stuff in the carton)
1/2-cup Whole-Wheat Pastry Flour
1/2-tsp Baking Soda
1/2-tsp Vanilla Extract
1 tbsp Sugar
1/2 tbsp Cinnamon
Dash of Salt
For Syrup:
1/2 Cup Mrs. Butterworths Sugar Free Maple Syrup or real Maple Syrup
1 tsp Butter (I used Brumble and Brown)
1/4 tsp. Ground Cinnamon
Directions:
1.) Mix Greek Yogurt, Egg Whites & Vanilla Extract into a small bowl
2.) In a separate bowl combine Flour, Baking Soda, Sugar, Cinnamon & Salt
3.) Combine and whisk till evenly mixed
4.) Place 1/4-cup batter onto non-stick skillet sprayed with cooking spray and cook till bubbles start appearing through the top of the pancake and then flip. About 1-2 minutes on each side
NOTE: Cook on medium heat and I flattened out my batter with the spatula to cook more evenly. I also sprayed the pan with cooking spray in between batches, so the skillet was always greased a bit. We don’t want stuck pancakes!
5.) In a microwave safe bowl, add maple syrup, cinnamon and butter. Microwave in 25 second intervals, stirring in between, until syrup is warm and butter is melted.
6.) Pour syrup over pancakes and top with Christmas sprinkles (sprinkles are optional, but pretty)

Calorie per serving including syrup (4 pancakes): 226, Fat: 1, Cholesterol: 0, Sodium: 541 (thats the syrup), Potassium: 165, Carbs: 41, Fiber: 5, Sugar: 14, Protein: 16
Pancakes without Syrup: Calories: 203, Fat: .7, Sodium: 396, Potassium: 165, Carbs: 33, Fiber: 5, Sugar: 6.5, Protein: 16 (we only used 1/4 cup of the syrup between the both of us, I’m saving the rest to put on oatmeal or even in my yogurt)
I am off to tame the hair down, and I’m going to try to get a batch of cookies done. They are for Joanne from Eats Well with Others, she tempted me to make cookies or something with that dam Cookie Butter from Trader Joe’s! So those will be for you my dear! 🙂
