Chicken, Peppers and Cheese Panini Sandwich

Hello and Happy Saturday!

I can’t believe how fast the time is going!  Next week is Christmas already.  Are you done Christmas shopping?  I like to think I am, but I need to check my list to make sure I didn’t forget anyone.

This was the first year I actually didn’t use my credit cards, no cross that, after my last cc bill, I realized I can no longer use them, I WAY over spent, so the last remaining gifts, which was most, I paid cash.  Talk about hard.  However, you tend to be more aware of your spending when your not using a credit card.  This Christmas was hard, normally I just buy whatever, but not this year, I had to think good and hard on my gifts, but I think I did ok!  For a bunch of my friends, I told them I would bake them goodies instead of gifts and they were happy with that, since most of them don’t cook, so this weekend is going to be a baking weekend.  So after I am done blogging, I am going to start prepping, making peanut butter, cookie dough and refrigerating it till Sunday for quick baking and I’m making granola!  I just love my baking weekends and tonight is a Christmas party, so no licking the bowl for me!!  Must be good!!!

Ok, first I have to tell you, a good portion of you bloggers are just HORRIBLE!   I saw this on several blog sites, and I thought no, no, no!  Then I saw it again, and said yes, yes, yes!  You know what I’m talking about?  You know who you are!  For those who don’t know, I am talking about this!!!


I saw this at Trader Joe’s about a month ago, picked it up, put it back and I did that a ton of times, then today, I picked it up and put it in my cart.  I rushed home to try it and OMG!  It is so dam good!  Yes I can say dam, it’s worth it.  It tastes like a sugar cookie, it’s so good.  I wish I never bought it.   Trader Joe’s better keep this in stock year round!  I plan on making my Classic Peanut Butter Cookies with this, or maybe a sugar cookie with it?  I don’t know yet, but I’m making some kind of cookie with it, thats of course if I don’t eat the whole jar!  I already made a pretty decent dent in it, and it’s only a few hours old.  If you go to TJ’s be warned, if you buy this, you will love it!!!

Now for my quick meal of the day.  This is so simple, probably not worth posting, since everyone knows how to make a sandwich, but I just have to tell you anyway, it was just that good.  One thing you may not know about me, is that I LOVE sandwiches, but then again you probably do know that since I love bread!  This sandwich was made with leftover garlic chicken from last night.

I used a Panini press to make it, but if you don’t have one you could do the following:  Put the sandwich in a frying pan and top with another frying pan to press it down, or this old trick I learned from Martha Stewart.  Take a brick cover it in aluminum foil and place on sandwich.  I do this when I cook a sandwich on the grill.  It works great!

Another sandwich trick is to cut a huge chunk of bread, pop it on the scale to see what weight you have and rip out the center until you get 3 or 4 oz.  When I used the Ciabatta Bread, it was 5 ounces, so I brought it down to 4 (two servings at 130 calories each) just by taking some of the bread out.  The best part of the sandwich is the bread so you want a large sandwich that you can fill sky high with goodies on the inside!  Taking out the inner bread makes for more room and more peppers for me!!

Chicken, Peppers and Cheese Panini Sandwich

Ingredients:

4oz.  Ciabatta Bread

1.5 oz Chicken – Cooked

1 Roasted Red Pepper – Jarred, large piece, rinsed and pat dried

1/2 oz Lite Mozzarella Cheese – shredded or in thin pieces (Provolone would be good to)

2 slices Tomato

1/3 Cup fresh spinach leaves

1 Tbsp.  Balsamic Dressing – I used Trader Joe’s Fat Free Balsamic

Directions:

Place in this order, Bottom piece of bread, chicken, peppers, cheese, tomato slices and spinach.  Place your dressing on the inside top piece of bread that way the bread soaks up the dressing and it won’t run off your sandwich.

Place in a Panini maker and cook until cheese is melted, about 5 minutes.

Makes 1 large sandwich!

Calories:  344,  Fat: 3, Cholesterol:  29,  Sodium: 692 (Eck),  Carbs:  56,  Fiber:  3,    Protein:   21

I love sandwiches because you can put whatever you like on it.  It’s quick, filling and so good!  I’m thinking of sandwiches now!  Now I’m thinking of Joey Tribbiani with his love for sandwiches.

    I have been so wanting to buy that speculoos butter…but have resisted because I know there’s a real and serious danger that I won’t be able to stop eating it once I get my hands on it! If you post a cookie recipe that uses it though, I might have to buy it…

    I do love sandwiches. A good grilled cheese is all I really need!

      I’m making cookies tomorrow with the speculoos butter. I’ll be thinking of you! That stuff is really dangerous, I wouldn’t buy it!! It’s not really to healthy either, but it so good!

    Oh, YUM! I have heard about the Biscoff butter, but not the speculoos variety! I am very afraid I’d love both! And your sandwich looks darn tasty, too…and I love the idea of removing some of the bread 🙂

    Wow – that is one delicious looking sandwich! I understand about paying cash and how you really have to think about your presents…Honey Bunny and I only spend $100 on each other for Christmas. When you’re limited, you don’t buy a bunch of junk…you really THINK about what you buy!

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol

There are two methods that I have used  in the past; the chlorine bath and the dish soap bath. This is what I have learned.

My favorite and only way I wash pumpkins now is using dish soap.  It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.

The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.

The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.

PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.

I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

Happy Monday! I want to thank those who have reach Happy Monday! I want to thank those who have reached out to me asking if I am okay. I am doing just fine. I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.

I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long. 

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.

Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.

This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
