Hello Folks,
Well after my cookie binge and junk eating, I officially hung up my bad food apron for a while. Yes, I’ve said it before, but I mean it. I have been feeling guilty and the scale is climbing not to mention I feel more run down. So as of today I’m really going to try to cook and bake more Skinny! I’ve seen a few blogs pop through my e-mail that is healthy and looks wonderful, new things for me to try. I saw a cookie recipe, yes cookie recipe from Eats Well With Others and she uses Sweet Potato in her Chocolate Chip Cookies. Yum! I love both those items, so together I bet it’s good, I plan on making those this week. As we speak I have whole grain crackers baking in the oven, which will be a perfect snack for me, since thats my down fall, snacking! I’ll share that recipe with you soon!!
Well on Friday I had my work Christmas party which was fun, but the food, oh the food, it was amazing! My Boss’s wife is such a wonderful cook! She should really have a cookbook! The first thing I had was this wonderful Baked Brie Cheese, surrounded by crescent rolls and raspberry jam. This picture does not do it justice. It was so dam good, I couldn’t stay away!!
Look at that Ohhy, Gooey Cheese! Here’s me cutting the cheese! lol, Hope I didn’t really cut the cheese!!
For the appetizer we had Mushroom Ragout covered with Puff Pastry. Now it’s no secret I am not a mushroom person, but this my Gosh was very good, I ate the whole thing! If I wasn’t with my close peers I would of licked the bowl! he he Oh, and by the time dinner was being served I was feeling a little good, so my pictures are not the best!
After our Mushroom Appetizer we were served Cauliflower Soup with Chive Oil. Simply amazing I must say! The picture does not at all do this wonderful soup justice! Marjon really added a special touch to everything! The Mushroom ragout had a cute little star on it, the Cauliflower Soup had a beautiful ring of Chive Oil. I wish I could cook like that!!
This next number I must of really loved it because I got a ton of photos of it. Oh wondering what I loved so much? It was a Stuffed Tomato. I don’t know what it was stuffed with, but it tasted out of this world. Just look at the beauty of it!
For our dinner we had Pork Medallions in a Port Wine Dried Cherry Sauce, accompanied by vegetable terrine and roasted potatoes. This dinner was after my own heart, if you look at my recipe page, you know how much I love Pork and fruit together. The Vegetable Terrine, was amazing. I don’t know what it is, or how she made it, but it was wonderful. The flavors all infused together was outstanding. I know I tasted basil, but the rest I am unsure. I need to google Vegetable Terrine to see how it’s made.
For Dessert we had a creamy Cherry Tortoni. It was a sweet taste of heaven. A perfect dessert to go with dinner!
I wanted to give a special thank you to the Jeff and Marjon for welcoming us into your home, serving us wine and serving us the most tasty food ever! This is my favorite meal of the year!
Happy Holidays!

Looks like lots of YUM at the party! I’ve been OD’ing on sweets too and it’s gotta come to a screaching halt too. Thanks so much for your comment at my blog. Please come again…I’m going to have some ‘healthy options’ in January. My hubby is diabetic and that’s how I try to cook much of the time, but December is definitely a splurge. Cute blog name!
