Garlic Cheddar Biscuits and Sauteed Brussels Sprouts

Hello Everyone,

It’s Thursday, yah!  Finally, getting my hair done today, I am in desperate need.  My roots are showing so bad that I’m half tempted to go back to brown hair, but then again I’m afraid the grays will really show!  Eck!!!!  Plus it is really fun being a blonde.  🙂

I’m happy to report that as of Wednesday I made my workout calorie burn goal 1720, which is 20 over 1700. I know not by much, but I still have a couple days left.  I pushed myself a little harder this week for three reasons, big reason #1, COOKIES!  I can’t stop, really I’m eating like 10 or more a day,thats at least 1000 calories, not good!  I have a problem. I need to not make cookies any more but it’s so fun!  I have one more up my sleeve, really I need to stop!  I feel so guilty and I punish myself by eating more cookies!  Sounds weird huh?  The sad thing is I know what I’m doing and I can’t stop.  I guess I’m having a cookie binge.  #2 Reason, I have my hair appointment Thursday and I have a Christmas party on Friday, I won’t have time to exercise with work on either day.  #3 Reason, is because it’s good for me and it gives me my happy endorphin’s.

I know I always say I’m going to eat better, I’m going to show you better food and not even a few days later I have some sort of sweet, well tonight I have a healthy recipe to share with you.  My guilt was horrible so I turned to a blog I read for some inspiration “Skinny Taste“.   I found two recipes on there that I made this evening.

Easy Garlic Cheddar Biscuits


Sauteed Brussels Sprouts

And my Own Lemon Chicken

I do have to tell you I don’t like Brussels Sprouts!  I tried them steamed, I tried them roasted and I just don’t like them but my Husband does.  So I figured I will try this recipe and if I don’t like this, I am officially done with Brussels Sprouts!  Guess what, I liked it!  The garlic and shallots really added flavor to this dish.  They didn’t have that bitter taste to them at all!   I am so happy with them, that I actually packed some up to take to lunch tomorrow.  I’m shocked!!  However with all this fiber I consumed today, I am waiting for my stomach to explode. For breakfast I had about 1 1/2 cups of Roasted Butternut Squash with my eggs, lunch was about 2 cups of steamed Broccoli with cheese and now Brussels Sprouts for dinner. Holy Fiber overload!!  lol  Oh and an apple for snack, and a handful of blueberries. I’m trying so hard to eat better!

Here is the recipe for the Easy Cheddar Biscuits – Skinny Taste

Garlic Cheddar Biscuits
Gina’s Weight Watcher Recipes 
Servings: 14 • Serving Size: 1 biscuit • Old Points: 2 pts • Points+: 3 pts
Calories: 97.3 • Fat: 3.9 g • Protein: 3.7 g • Carb: 13.0 g • Fiber: 0.0 g

Preheat oven to 400°. Line a cookie sheet with parchment paper.

Melt butter in a small frying pan, add half the garlic and saute on low heat about 1 minute. Remove from heat and add parsley.

In a large bowl, combine biscuit mix, cheddar cheese, and remaining garlic. Stir in milk and mix (do not over mix). Drop batter by heaping tablespoonfuls (1.5 oz each) onto prepared cookie sheet.

Bake for 10 minutes. Brush or drizzle biscuits with melted butter. Bake for 5 more minutes, or until lightly browned on the bottom.

NOTE:  I didn’t change the recipe at all, except I used Trader Joe’s Lite Blended Cheese and Brumble and Brown for Butter.  I calculated my calories and yup were pretty much the same!!


Sautéed Brussels Sprouts

Finely shred the brussels sprouts after thoroughly washing. In a sauté pan, heat olive oil. Add shallots and sauté about 2 minutes, add garlic and saute until golden. Addbrussels sprouts, salt and pepper and sauté on medium-low for about 4-5 minutes.

NOTE:  Calories the same and I didn’t change a thing!  These were so good!  Thanks Gina for the recipe!  I loved them!  First recipe I tried with these green little guys that I actually liked and I will most definitely make them again!

For my chicken recipe, this was easy, preheat oven to 400, Sprinkle lemon pepper on chicken, place lemon slices on top and bake in a pyrex dish sprayed with cooking spray for 25 – 30 minutes.  I used Trader Joe’s Lemon Pepper, love the stuff!  Calories 120 calories for 4 oz of chicken!

I thought I’d give you my workout from last week.  This helps keep me accountable for my workouts!

Sunday – Nothing rest day

Monday – Kickboxing – 40 minutes

Tuesday – Full body Circuit Training – 40 minutes and 10 minutes jump roping

Wednesday – 1.5  Mile walk, 30 minutes jump roping, 40 minutes kickboxing

Thursday – Full body Circuit Training- 20 minutes

Friday – 2.5 Mile walk, 20 Minutes Jump Roping, 10 Minutes kickboxing

Saturday – Nothing Rest Day
