Good morning,
I have to tell you I had a great Monday! Work was pretty good and when I came home I had three surprises waiting for me, and one of them is for you! The first thing I opened was a wonderful package of a Cranberry Lemon Biscotti from Peanut Butter and Julie. These Biscotti are so delicious! There perfect! I ate two as soon as I got them and I look forward to having a few for breakfast tomorrow with my tea!
Thank you so much Julie! I just love them and the card is adorable! I love it “Hope Peace and Cookies”, so perfect! You should check out Julie’s blog out, wonderful recipes and she even sells granola. I am going to check those out! You got love her name too!! A name after my own heart!! 🙂
The 2nd thing I received was my pan and cookbook “Cooking with Trader Joe’s Skinny Dish” that I won last week. This is a great cookbook, lots of recipes that I want to try, and it even has the calories on it! All the items I can buy at my Trader Joe’s! How nice is that? You know how much I love Trader Joe’s! If your Vegan, this cookbook would be nice for you, lots of tofu and meatless meals. It would make a nice gift for my friend, but I’m keeping this copy! So stay tuned for me to try out some recipes and share with you.
The third thing I got was two spatulas from OXO. It’s so cute, a limited edition spatula that supports Cookies for Kids Cancer, 50 % of profits benefit pediatric cancer awareness,up to $100,000. Today, 25% of children diagnosed with cancer will not survive. There is a direct correlation between increasing research dollars and decreasing mortality rates. Progress has been made, but we are not there yet. If you want to purchase one to help support Cookies for Kids, check out your local Bed Bath and Beyond or go to www.amazon.com, or check out www.oxogoodcookies.com to find a local retailer.
You can also send a virtual cookie to help spread the word and how to find out how to host a Bake Sale or fund raising event for Cookies for Kids Cancer, Until December 31st, OXO will match all proceeds from registered bake sales, up to $100,000.
I’ll let you know at the end of the post on how you can win a Be a Good Cookie spatula. But first let me share with you my Peanut Butter Cookies I made this weekend.
I have to tell you these are the best Peanut Butter Cookies I ever made. They taste like a cookie grandma would make. There peanut buttery, full of chocolate chips and I threw in some Reese Peanut Butter Chips. There a crispy cookie which I just love!
Out of the 5 batches of cookies I made, these are my favorite, tomorrows I will show you my runner up cookie. I don’t want to tell you today because there my Mom’s favorite and she will be receiving them in the mail Wednesday. Let me just tell you, there so pretty and an old time classic.
Classic Peanut Butter Cookie with Peanut Butter and Chocolate Chips
Ingredients:
1 Cup Creamy Peanut Butter
1 Cup Unsalted Butter
1/2 Cup Sugar
1/2 Cup Brown Sugar
1 tsp. Baking Soda
1 tsp. Baking Powder
2 Eggs
1 tsp. Vanilla Extract
1 1/4 Cup All Purpose Flour
1 1/4 Cup Whole Wheat Pastry Flour
1/2 Cup Semi Sweet Chocolate Chips
1/2 Cup Reese Peanut Butter Baking Pieces
Additional Sugar for Rolling
Directions:
In a large mixing bowl, beat butter and peanut butter with an electric mixer on medium to high speed for 30 seconds. Add the granulated sugar, brown sugar, baking soda, and baking powder. Beat until combined, scraping sides of bowl occasionally.
Beat in the egg and vanilla until combined.
Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Fold in chocolate chips and Reese’s Baking Pieces.
Cover and chill dough about 1 hour or until easy to handle.
Preheat oven to 375 degrees F.
Shape dough into 1-inch balls. Roll balls in additional granulated sugar to coat. Place balls 2 inches apart on an ungreased cookie sheet. Using the tines of a fork, flatten balls by making crisscross marks on top.
Bake for 7 to 9 minutes or until bottoms are light brown. Transfer to a wire rack and let cool.
Then eat, eat, eat! You’ll need a big glass of milk with these too!!!

Most Definitely The Best Cookie Recipe has to be the “Peanut Butter Cookies with Reeses Pieces”. I have made them in the past and our family loves them very much. I’m going to try and Make your New Chocolate Chip Cookie Recipe which includes everything, but the kitchen Sink. I can see how they would be a heavy cookie, with all those ingredients you include. Wish me luck on the turnout.
