Pork with Cranberries and Pear Recipe

Hi and Happy Saturday!

I’m off to San Francisco to do some Christmas shopping, even though I don’t know what to buy anyone since they didn’t give me a list!  So I guess I’ll wing it, one thing about me, is I don’t have a problem shopping!  Speaking of shopping, I have something for you!!  But before we get to that, I was so surprised when I read an e-mail from Cooking with Trader Joe’s, it was about all different Trader Joe’s foods and holiday recipes from there cookbook.   I was scoping the recipes and I saw one from me!  It was for last years Cranberry, Cherry Walnut Sauce that I entered onto there website.   I didn’t even know, glad I read the e-mail!  I was the only recipe from a reader on the e-mail.  I’m so happy and proud!  🙂

With all my happiness I feel the need to give!  Guess what, this my first give away, I’m so excited, I am giving Bobby Flay’s Bar Americian Cookbook, with his signature in it!

This is a really nice cookbook, I got one for me and one for you, it’s in perfect condition, I didn’t even open yours.

This cookbook is perfect for holiday entertaining or even for giving as a Christmas present to a foodie in your family.  There are lots of recipes from drinks, appetizers, salads, burgers, main meals and more.

It’s really easy to win, I’ll post the rules at the bottom of my blog, I’ll pick a winner on Monday evening and announce the winner on Tuesday morning’s post.

I made a great recipe this week, it’s Pork Chops with Pear and Cranberry Sauce.  It’s perfect for the season and full of flavor.

First I browned the Pork on all sides in an oven safe skillet.

Set the Pork on a plate and add onions in the skillet and cook for about 3 minutes until tender.

Then add 1/4 Cup of fresh cranberries and 1 tsp of brown sugar.  Give a good stir and cook for about 1 minute.

Then add the Pork back into the skillet.

Add the pears and apple cider or apple juice and then flip the pork, you want to make sure both sides have the sauce from the pan on it.

Place the whole skillet in the oven and bake for 30 minutes.

Pork Chops with Pear and Cranberry Sauce

1 lbs. Boneless Pork Chops

1/2 Onion – Sliced

1/4 Cup Fresh Cranberries

1 tsp.  Brown Sugar

1 Large Pear – sliced

1/2 Cup Apple Cider or Apple Juice

Preheat oven to 350

Pepper and Salt Boneless Pork Chops on both sides.

In an oven safe skillet, spray with cooking spray and place on medium heat.  Brown Pork Chops on all sides.  Set Pork aside on a plate.

In the same skillet add onions and stir until tender, about 3 to 5 minutes.

Add cranberries and brown sugar.  Stir and cook for about 30 seconds.

Add your Pork back into the skillet and add the Pears and Apple Cider.

Turn the Pork over so that both sides are coated with the sauce.

Place the skillet in the oven and bake for 30 minutes.

Let the pork cool for about 4 minutes so the juices run back in and serve with the  Pears and Cranberry sauce from the pan.  I served the whole skillet at the table.

I had left overs so I had it for lunch and the next day, heated in the microwave it was still tender, maybe even better then the first day!  The flavors are unbelievable.
