Creamy Basil Dip

Hi,

Normally every Sunday I like to prepare a dip for work, that way I can take cut up veggies and have that as snack.  This week I created a healthy dip, that is completely guilt free.

I bought a huge bunch of Basil with the intent to make Basil Pesto Bread, but you know how that goes, I never made the bread but I had all this basil to use, so why not have a nice dip?  I love pesto, but I really hate all the calories associated with it.  Well this dip is made with greek yogurt.

This dip is creamy, and full of flavor and even though I use it to dip vegetables in, I have also had pretzels in it!   So good with pretzels!

Creamy Basil Dip

1 Clove of Garlic

1 Bunch of Basil Leaves – about 20 leaves

1/2 the juice of a Lemon

1 oz Fat Free Cream Cheese – softened

1 Cup Non-fat Plain Greek Yogurt

1 tsp. Parmesan Cheese

Salt & Pepper to taste

Directions:

In a food processor (I used my mini) add your garlic, basil leaves, lemon, Parmesan Cheese and process until all combined and the basil is in small bits.

In a bowl, add your basil mixture, cream cheese and blend together, then add your greek yogurt. Give it a good stir till all combined.

Give it a taste, add salt and pepper if needed

Makes 1 3/4 cups

Enjoy!

I bet this spread would taste good on a turkey sandwich too! Or even on a tomato sandwich.  No need to just use it for vegetables.

I wanted to say Happy Birthday to my friend Andrea!  I hope you have a great day!!!  Now I need to go make a b-day surprise for her, I’ll share the recipe with you later.  I don’t want her peeking! 🙂

I hope everyone else has a great day, and just think two more days till the weekend!  Count down is on!!!
