Helo and Happy Wednesday! Were getting closer to Friday! I can’t wait, then I’m on vacation for a week! Woohoo!! That will give me time to fix up my blog, look into self web hosting and bake lots of cookies for the Cookie Swap. What are your favorite kind of cookies??
On tonight’s menu I made a spicy stuffed chicken breast. It’s one of my favorite chicken dishes and it’s so easy and fairly fast! I found a bag of pretzels that had the crumbs left, who does that? So I decided I would incorporate them into my dinner. Who doesn’t love pretzels?
First I threw some pretzels into a baggy and broke them up with my knife sharpener.
Set that a side in a bowl, took my chicken, laid it between parchment paper and took my rolling pin and whacked at it till it flattened. Huh, I must have some frustration to let out?
Then I took one Laughing Cow Con Queso Cheese and spread it on the chicken and topped with 5 picked jalapenos diced up.
Closed it up and held it together with 4 toothpicks.
Dipped it in egg whites with a splash of hot sauce, then rolled into my pretzel mixture. Placed on a baking sheet lined with foil and a cooling rack.
Baked it for 30 minutes and out came this beauty! Pictures doesn’t do it justice, since I’m having a hard time taking photos in the evening.
Spicy Pretzel Breaded Stuffed Chicken
1 8 oz Chicken Breast – flattened thin
1 Laughing Cow Cheese – 1 oz (I used Spicy Con Queso, but any spreadable cheese you like will work)
5 Pickled Jalapenos – diced small
1/4 Cup Pretzels – chopped
1 tsp. Flour
1 Egg White Mixed
1/4 tsp. Garlic Powder
1/4 tsp. black pepper
Dash Cayenne Pepper
Dash of Hot Sauce
Directions:
Preheat oven to 400
Line a baking sheet with foil, and top with a cooling rack, spray with non-cooking spray, set aside
Add pretzels, garlic powder, black pepper and cayenne pepper in a bowl, set aside
In another bowl add egg white and hot sauce
Take your chicken and spread the cheese and top with jalapenos. Seal it shut with 3 or 4 toothpicks.
Carefully dip chicken in egg mixture and then carefully dip in pretzel mixture. You may have to add the pretzels by hand, just be sure to cover the chicken.
Place chicken on baking rack and place in oven. Bake for 30 minutes or until chicken is done.
Don’t forget to take the toothpicks out before serving.

I served it with a side of Alexia Sweet Potato Puffs and Spicy Ketchup! I just love this dinner! It’s fast and full of lots of flavor! It’s great the next day too! I had the other half for lunch!
You could any kind of cheese, goat cheese and sun dried tomatoes would be good too!!

Welcome to Peanut Butter and Peppers. I use a recipe calculator from Sparks People, I input all the ingrediants, put in how many servings and it figures out the calories and nutrtion for my dishes.
