Good morning!! I am very excited to share today’s recipe with you! All I can say is that is sweet, but not to sweet, low in calories, easy to make and everyone in the household will love them!
I spent my Saturday morning searching high and low for something different for breakfast, but I had a major brain fart and couldn’t think of anything. I kept seeing e-mails, blogs, ect… about Almond Joys, and my brain starting ticking. How can I have Almond Joys without all of the calories? So as I thought and thought, it came to me, pancakes! I haven’t seen a recipe for Almond Joy Pancakes! Can I create it with my go to Whole Wheat Yogurt Pancake recipe? Can I make it under 200 calories? Can I make it simple enough that anyone can make it? Answer,check, check and check! Woohoo!! Oh and will it actually taste like an Almond Joy? Answer is yes! I even checked with the family and I got two thumbs up as there mouth was full of decadent pancakes! Now let me try, yah baby yah!! They do very well taste like Almond Joys! Mission accomplished!!!
Calories your wondering? You get 4 pancakes at (drum roll please) 194 calories! Can you believe it? Half the recipe is only 194 calories. We need to embrace this moment! I am so happy with this, you don’t even understand!! I get a little excited over food!!
One thing you need to know, is that these pancakes cook fast! Super fast, so watch them carefully, don’t walk away from the stove!
Almond Joy Pancakes
1/3 Cup of Greek Yogurt – Plain
1/3 Cup Lite Coconut Milk
2 egg Whites
1/2 tsp. Almond Extract
1/3 Cup Whole Wheat Pastry Flour
1/2 tsp. Baking Soda
1/2 tsp. Sugar
1 Tbsp. Unsweetened Cocoa Powder
1 Tbsp. Shredded Coconut – Unsweetened
1 Tbsp. Mini Chocolate Chips
Directions:
1.) Mix Greek Yogurt, Egg Whites, Coconut Milk & Almond Extract into a small bowl
2.) In a separate bowl combine Flour, Baking Soda, Sugar, Cocoa Powder
3.) Combine and whisk till evenly mixed
4.) Fold coconut and chocolate chips
5.) Place 1/4-cup batter onto non-stick skillet and cook till bubbles start appearing through the top of the pancake and then flip. About 1-2 minutes on each side
6.) Top with Maple Syrup (I used Sugar Free), a pinch of coconut and a few mini chocolate chips.
