Peanut Butter Cookies with Reese’s Pieces

Hello!  Even though I you are receiving this today, it’s actually Saturday, so I thought I would tell you about my day!  I decided to do a little shopping in Walnut Creek and get a nice warm lunch, it’s cold outside.  I woke little Jenny up at 7am and she wasn’t ready until 9am, so I was bored!  I decided to make this while I patiently waited for her.

It takes teens forever!  I waited as my waistline grew from eating these!  Well, actually there not to bad for you!  Little flour, lots of Peanut Butter and low on sugar!  Perfect cookie!  I made a batch of these and took almost all of them to Hubby for a surprise visit to his work.  Hope he liked them!

After dropping off the cookies, I did a little shopping and I’ll tell ya Bath & Body Works had so many nice things for the holiday season!  I can’t wait till Black Friday!  They are having a VIP bag for $20.00 filled with over $100.  worth of goodies!  I love shopping on Black Friday!  I know I’m crazy!!  I bought some goodies there and then we searched for lunch!

We ate a Lark Creek!  The restaurant was nice and the waiter brought us two Hot Apple Ciders and let me tell you it was so good!  This inspired me, I’m going to make my own batch with apples and spices in the crockpot and let it slow cook over night!  When I wake up my house will smell nice and I’ll have a nice fall drink waiting for me.  I’ll let you know how it turns out!


After my drink I had one roll, and this Butternut Squash Soup with apples!  So good!  Going to try making my own soup too!!  I still have a ton of Butternut Squash to use, so be ready for that recipe coming in the near future!

Being the good girl I am, I order a chicken wrap, and it came with homemade potato chips, which I only ate two.  I really can’t stomach to much fried foods, besides my lunch was already getting a little high on my calorie count for the day.  I ate half the chicken wrap and ate only the chicken, lettuce and tomato out of the other one.  It was an ok wrap, nothing to brag about.  I thought the chicken would be warm, but it was more like deli meat, not great!

I came home gave Jenny the rest of the cookies, well I did eat one more (three total for the day), there so good.  If I kept them, I would eat them all and that is way to dangerous for me!!

Peanut Butter Cookies with Reese’s Pieces-Adapted from Healthy Food for Living

1/2 Cup Peanut Butter – I used my homemade PB!

1 Egg or Egg Substitute

1/2 Tsp. Vanilla Extract

1/4  Cup of Whole Wheat Pastry Flour

1/4 Cup Old Fashion Oatmeal

1/2  Tsp.  Baking Soda

1/4 Cup Sugar

1/4 Tsp. Sea Salt

3 Packs of Mini Reese’s Pieces left over from Halloween

Turbinado Sugar (Raw Sugar) for sprinkling on top (Optional)

Directions:

Preheat oven to 350

Line a baking sheet with Parchment Paper

In a bowl, beat the sugar and Peanut Butter together until creamy.

Add your eggs and Vanilla Extract and beat until combined.

Add your Flour, Oats, Baking Soda and Salt and beat until combined.

Stir in your Reese’s Pieces.

Place a Tbsp (I used half a cookie scoop) of cookie batter on to baking sheet and sprinkle with Sugar.  Bake for 8 to 10 minutes.

Have with a big cup of milk or a Latte with them!  Enjoy!!

These were so good and the Reese’s really made them pop!  I will definitly make again!!  There more like a cookie dough cookie, crispy on the outside and cakey in the middle.  There fast and easy to make too!!

Now time to debate for dinner and I better get those apples chopped so I can make Cider!  Yum!!
