I was browsing around Cost Plus today when I saw something that shocked me! As tempted as I was to buy it, I didn’t,probably should have, but ewww, I couldn’t! Have you ever heard of this?
What the hell is that? To top it off, it’s pudding in a can? Sponge Pudding! Yuck!! Just doesn’t sound right!!! Have you ever heard of this? Do I dare as what it tastes like? Never mind, I don’t want to know! It’s just dirty!!!
So let’s get to something that sounds a lot better, like Pumpkin Apple Bread!
This bread is so moist and delish, not to mention easy and fast! I made this in 3 mini loaf pans or you could do this in one loaf pan.
Pumpkin AppleBread
1 Cup Whole Wheat pastry Flour
1/2 Cup Rolled Oats
1 Tsp. Baking Soda
1/2 Cup Brown Sugar
1 Cup Pumpkin, Canned not Pumpkin Pie Filling
1/2 Cup Apple – Peeled, Cored and Diced
1/2 Cup Unsweetened Apple Sauce
1 Egg or Egg Substitute
1 Egg White
1 tsp. Cinnamon
1/4 tsp. Ground Cloves
1/4 Tsp. Pumpkin Spice
Directions:
Preheat oven to 350
Mix together Whole Wheat Flour, Oats, Baking Soda and Brown Sugar. Add your eggs, pumpkin, applesauce and spices and mix until combined but don’t over mix. Gently fold in apples.
Pour into three mini bread pans or 1 loaf pan.
Bake mini pans for about 30 minutes. Check with a toothpick to make sure it comes out not wet. Bake large loaf pan for about 50 minutes.
Makes 16 large slices or 18 Mini Loaf Pan Slices
Calories per slice: 61, Fat: .2, Sodium: 81, Potassium: 361, Carbs: 13, Fiber: 1.7, Sugar: 6.8, Protein: 1.7

This is really be good with Pumpkin Butter!!
Now time to rest my stomach! I ate 4 servings of butternut squash for dinner,with a chicken sausage and salad, I was hungry, but in my defense the servings were small! It said 4 cups, but I don’t think so!!! Impossible!! But it was so good! But my stomach doesn’t like me right now!! Have a great day!!!!
I’ve seen those cans before, too! It freaked me out. Haha. Maybe one day I”ll buy one for…cultural purposes. But let me tell you, that pumpkin apple bread sounds much more enticing.

I’ve heard that Spotted Dick is supposed to be fantastic, but seriously, you’d have to not tell me what it was to get me to eat it. It just sounds like a disease!

Spotted Dick is made with Lard! Yuck!!! No thank you! But I heard it tastes good, but I’ll pass on that!
LOL, ok so we have a friend from England and he jokes about it, so we know it is from England. It is a dessert made with sponge cake, like a bread pudding, but we have never tried it.
My co-worked said he has had it and said it’s really good!! Some how I can’t find pudding cake in a can good!

Hi Jennifer. I just made your pumpkin apple bread and wanted to tell you, it’s delicious!! I made the 3 mini loaves and took two of them to work. Everybody said it was wonderful, and couldn’t believe that it was so low in calories and fat. I’ve tried a couple of your other recipes too, and they’re always great! I love your blog, and always look forward to seeing your new recipes.
I made a large loaf of the apple pumpkin bread……..very good! I do think I would add a little salt next time.
