What I Learned from a Cupcake

Hello and Happy November!

I can’t believe I said November, boy time flys,Christmas is next month!  Eck! I am so not prepared for that holiday, but who is?

Today was our work Halloween Party.  I must admit, I work with the oddest people, I guess thats why I fit in.  Everyone dressed up and we had lots and lots of sweets!  We had so many sweets we had to order lunch in, just to get some good nutrition!  Did you dress up?  This is me, I was suppose to be a wolf, but I look more like a cat.  I was going to put makeup on, but my friend Andrea, said my face may confuse people to what I am cat or wolf. Lol  Here is me next to my cupcake, cookie tray I brought.

Here is all the sugar we ate and have left over for the week!!  Now that is scary!

I don’t know who this is , but scared the heck out of me!!!

What I learned from a cupcake!

1.  Don’t make mini ones if you want to be all fancy, it’s a pain in the butt and took forever!!!

2.  Don’t eat the batter, not only will you rack up calories, you’ll get a stomach ache!

3.  Don’t make your own frosting!  I added about 30 calories to the cupcake, making homemade frosting rather then using can.

4.  Again don’t make mini ones, because even though there small, you end up with 56 of them, and that is to many!!  Even though they taste so good!

5.  Mini cupcakes don’t travel well and they don’t look as cute as they did when you made them!

They are so cute and tasted so good!!

I got 56 cupcakes out of this batch.  I made three different colored batter, one orange, one yellow and I kept one white.  With a teaspoon, I added the first color, yellow,then carefully added 1 teaspoon of orange batter.

Then the white batter.

This is what they looked like turned out.  Pretty cool!!

Candy Corn Vanilla Cupcakes with Vanilla Butter Cream Frosting

1 Box of Betty Crocker’s White Vanilla Cake Mix

5 Egg Whites or 3/4’s cup liquid egg whites

3/4 Cup of Water

1/4 Cup of Canola Oil

1/4 Cup of Unsweetened Apple Sauce

Butter Cream Frosting:

2 Sticks of Butter

2 Cups of Confectioner Sugar

1 tsp. Vanilla Extract

Yellow and Red Food Coloring

Directions:

Preheat oven to 350

Line two mini baking pans with cupcake liners or 2 Regular size Muffin pans to make bigger cupcakes

In a medium bowl, mix all of the cake ingredients, and beat or mix until no more lumps.

To make orange and yellow batter- Take about 3 cups of batter and pour into two bowls, so you have three bowls of batter all together.

To make yellow batter, I used 3 drops of yellow and mixed.  You may use more to get more of a vibrant color.

To make orange batter, I used 1 drop of red and 2 drops of yellow and mix together,if you need more of an orange color add more yellow.  The red is strong and you don’t want your batter pink.

I took a level Teaspoon to pour the batter,  first layer, I added I tsp. of yellow, and then I took 1 tsp. and added the next layer of orange and topped it off with the white batter.

Once all cupcakes are filled, place in the oven for about 12 minutes.  Check the box for bigger cupcakes, I think 17 – 20 minutes.

Once cupcakes are cooled, time to make the frosting.

In a medium bowl add butter and 1/2 cup of confectioner sugar, and beat well, once all incorporated add about 1/2 cup more and beat, and add your vanilla.  Beat well together, and keep adding the sugar until you get the taste you like.  I ended up using about 2 Cups of Sugar.

Once you have the consistency and flavor of the batter you like, time to separate the batter into 2 separate bowls.  Same as I did for the batter.  For yellow, I used 3 drops of yellow food coloring. For orange I used 1 drop of red and 2 yellow for orange.  Add more coloring for a more vibrant color.  My cupcakes, were kind of pastel.

Take 3 ziplock bags and cut the corner off, but not to big, your hole should be the size of a #2 pencil.  Add your frosting to each bag.  So you have three separate bags, with the three colors.  Time to frost the cupcake.  Do one circle with yellow, then do an inner circle with orange and top with a little white.  Time to put a candy corn on top!  Your done!!

Note:  I recommend making bigger cupcakes, since it’s way less time consuming, unless you need a bunch of cupcakes!  The whole process took me almost 3 hours to make these cupcakes.  If you want to save calories, use canned frosting, the butter cream tastes so good, but it adds a lot more calories and fat to the cupcakes.

Calories per cupcake:  92,  Fat:   4.7,  Cholesterol:  9.2,  Sodium: 63,  Carbs: 12,  Sugar: 9, Protein: .06

I am happy with these cupcakes.  I love the colors, very fall and Halloween!!  You could even make these for Thanksgiving!!  I will make a bigger batch of these for other holidays!  I love the three colors on the inside and the three different frosting colors!  It was fun to make, no matter how much I may complain!

I hope you try these!   I think they are very impressive!

Now that November if here and October is behind us, it’s time to step up with healthy eating and exercises!  Today when I came home from work, I was overwhelmed by guilt from eating all this sugar.  I haven’t done that in over  a year!  I  did 43 minutes of strength training and I did a 3 mile power walk!  It felt good!  So starting right now, it’s going to be eating better and being healthier!  The holidays are coming, one down two to go, so I want to keep up with being healthy so I can indulge over the holidays without guilt!!

      Thanks! The cupcakes are so good! Very moist and the frosting is so delish! I’m trying my hardest to stay away from them, but it’s so hard! There so good!!!

    Well, even mini size.. they are super cute with the two tone colors. I would definitely go into a sugar coma at your work. LOL.

      Everyone thought I was going to bring healthy snacks and I thought someone would bring a veggie and fruit tray and to my surprise we ended up with all sweets!! I have been pushing everyone to take the sweets home to there kids, it’s so hard having them in the office!!! To much temptation! I have to honestly say I am sugared out! I was actually craving fruit today!! Which is a good thing!

    your cupcakes look adorable but not only would i not make mini’s, I would not make them…at all!

    Pans of bars. Big sheets of things. Slice and serve. Individual things like cookies or especially cupcakes, oh no way do I have time for all that 🙂

    You went over and beyond the call of duty!

      I did not think they would take that long! You know when you get an idea in your head and you think oh thats easy enough, well I didn’t realize how long it would take! I will definitely make bigger next time, but I like your idea of big sheets and pans of bars! So much nicer!! Next time a big sheet cake for sure!!

    Eh! I made these exact same ones for Zaya’s birthday last year and I remember being exhausted after decorating them all too…funny! This year I decided to let all the kids at her party do the decorating themselves, which was fun for them and let me off the hook, hee hee!

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol

There are two methods that I have used  in the past; the chlorine bath and the dish soap bath. This is what I have learned.

My favorite and only way I wash pumpkins now is using dish soap.  It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.

The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.

The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.

PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

Happy spooky Thursday! I added a few touches of Ha Happy spooky Thursday! I added a few touches of Halloween in my kitchen. I don’t do much Halloween decorations, but I just love to add it to the kitchen. Every time I go to the kitchen it makes me smile.

To add Fall or Halloween you don’t need to add a lot, just a few touches here and there. I will give a full tour in stories and tag a few items. Majority of the decor came from @krumpetshomedecor and the towels and bat banner from @theblessedpeach

I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.

I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

Happy Monday! I want to thank those who have reach Happy Monday! I want to thank those who have reached out to me asking if I am okay. I am doing just fine. I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.

I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long. 

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

Hello, hello! It may be 100 degrees outside, but I Hello, hello! It may be 100 degrees outside, but I can’t resist putting out some Fall. Especially when you get new decor from @12timbers.  You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.

Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.

Look at this friends! It’s my first Fall vignett Look at this friends! It’s my first Fall vignette. Notice anything that seems a tad early? It’s my first pumpkin from my garden. Can you believe it? They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.

This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
