Meringue Ghosts & Chocolate Covered Pretzels

Oh boy!  I spent my Sunday baking all day for a work Halloween Party!  I should of made healthy treats but I opt for sweets, since it is Halloween after all!  Questions:  Are you dressing up for Halloween?  Did you have any parties this weekend?  Fill me in on the gossip!!

Ok,  I hope you saved those two egg whites from yesterdays Candy Corn Sugar Cookies.  You did make the Sugar cookies after all, right?  If not, do so now, you’ll love them!!!  Anyway, look at what I made with those two left over egg whites.

I made little Halloween Ghosts. They cracked a little bit, so I am saying there old ghosts from the 1800’s coming to haunt you!!


I’m totally not the most artistic person, so it looks like my ghost’s are crying, all part of there personality!  I took some quick picks outside, but the sun was making the chocolate melt.  It was like a scary movie!!

Meringue Ghosts – Adapted from About.com

Ingredients:

  • 2 egg whites, room temperature
  • 1/8 tsp cream of tartar
  • 3/4 cup powdered sugar
  • 1/2 tsp flavored extract, like vanilla or almond
  • 8 oz semi-sweet chocolate
  • toasted nuts, coconut, or sprinkles (optional)

Preparation:

1. Preheat the oven to 200 degrees. Place the room temperature egg whites in the clean bowl of a stand mixer fitted with a whisk attachment. (Alternately, you can use a large bowl and a hand mixer with whisk attachments.)

2. Turn the mixer to medium-high speed and beat until the egg whites are foamy. Turn the mixer off, add the cream of tartar, and continue beating on medium-high until the whites have turned an opaque white color and hold soft peaks.

3. At this point, start adding the powdered sugar a few spoonfuls at a time with the mixer running. Once all of the sugar has been added, add any extracts you are using and turn the mixer to high speed. Continue to beat the egg whites until they are very thick, glossy, and a shiny white color. When you stop the mixer and lift the whisk out of the whites, the whites should have a very stiff peak. This process will take about 7-12 minutes in a stand mixer.

4. Cover two baking sheets with parchment paper. Scoop your meringue mixture into a piping bag fitted with a ½ inch round tip, or if you don’t have this, into a large Ziploc bag with a ½ inch hole cut in the corner.

5. Pipe your meringue into ghost shapes about 1-1/2 inches wide and 2 inches tall. You can either do this by squeezing the bag and pulling up gradually, making one big “blobby” ghost, or by making a series of concentric circles spiraling upward. Pipe 12 ghosts onto each baking sheet, for a total of about 2 dozen meringue ghosts.

6. Bake the meringues in the preheated oven for an hour. After an hour, open the oven door and continue to cook for 30 minutes, then turn the oven off, close the door, and allow the meringues to sit until completely cool, about 1 hour.

7. Once the meringues are crisp and room temperature, melt the chocolate in a microwave-safe bowl, stirring after every 30 seconds to prevent overheating. If you want to coat the bottoms in crushed nuts, sprinkles, or toasted coconut as well, place those toppings in small, shallow bowls nearby.

8. Dip the bottoms of the ghosts in the melted chocolate, and scrape the bottoms against the lip of the bowl to remove excess chocolate. If you’re dipping them in other toppings, immediately press the bottom of the ghost into the bowl of toppings so they adhere to the wet chocolate. Replace the dipped ghost back on the baking sheet and repeat with remaining ghosts and chocolate. Dip a toothpick in the remaining melted chocolate and give each ghost two dots for eyes and, if you desire, a mouth or other features.

9. Refrigerate the ghosts to set the chocolate, about 5-10 minutes. Do not refrigerate them any longer than absolutely necessary, as they will absorb moisture from the refrigerator and lose their crispness. Store Meringue Ghosts in an airtight container at room temperature.

Calories per ghost without the chocolate – If you added chocolate, add about 20 calories:  16,  Fat:  0,  Sodium:  4.6.  Potassium:  6.8,  Carbs:  3.8,  Sugar:  3.7,  Protein:   .4

Not bad stats for the cookies, you could do this at Christmas time and dye the meringue green, and make Christmas Trees.

With the left over chocolate I made these, nothing goes to waste in my house.

Chocolate covered pretzels!  I just took the left over chocolate, put it in a zip lock bag and then drizzled it all over the pretzels, and threw my left over sprinkles on top!  This is a low calorie snack!!  My guess is about 12 calories a pretzel.  Each pretzel is under 4 calories, you gotta love Trader Joe’s Pretzel Slims, 28 of them for 110 calories!

If the chocolate is to soft and it’s not hardening on the pretzels, just pop them in the fridge for a few minutes.

    This weekend was certainly a nutritional disaster for me, but eh. It was just ONE weekend, right?

    Those ghosts are adorable! And yes, the fact that they look like they’re crying definitely gives them character!

      Thank you! I kept seeing chocolate covered pretzels and potato chips at Trader Joe’s and I figured I’d make my own, less calories! 🙂

Happy Monday! I did a little bit of Spring cleanin Happy Monday! I did a little bit of Spring cleaning this weekend. I wanted to give my kitchen counters the less is more look.

I did have a very hard time taking my sink tray off the counter. I’ve had the tray there for years, so I thought I would change it up. Don’t be surprised if the sink tray makes its way back. 😂 I may add some herbs to my window sill for some fresh green color.

I used @cloth.bristle to clean my kitchen counters and sink. I love cleaning my sink with it. It makes it so sparkly and smells good too! Love that it’s all natural.

Happy Friday! Our next winter storm is here! It is Happy Friday! Our next winter storm is here! It is just awful out there. Heavy rain, high winds and hail. This is not a winter that we are used to in California.

My husband and I are not fancy when it comes to eating dinner. Since it’s just the two of us, we never use the dining room table, but always eat at the kitchen counter.

There is no reason why we can’t eat fancy at the kitchen counter. I am using my new placemats that I got from @vmathome. They are thick, water, stain resistant and can handle heat up to 350F degrees. I love the color and style of the placemats. They have a wide variety of styles and colors, along with matching table runners.

I styled my table with bright spring colors that I was inspired by carrots. I still have bunnies on the brain. lol I had fun with this place setting, it’s so nice to have dinner with a little style then having it on a plain plate and paper napkins.
