Old Fashion Hamburger Rolls

Yesterday was your typical Monday!  Running late, the pump at the gas station didn’t work, and the commute, man the commute was horrible!  Then to top it off I had to go to the dentist and a tooth I had a root canal and crown on is starting to decay underneath, so I was told I’ll probably have to have another root canal on that tooth!  Ugh!!  I’ll find out for sure in a couple of weeks, when I go back for X-rays!  At least at the end of the week I get to look forward to going to Tahoe for my Hubby’s and my 6 year wedding anniversary!  That will be fun!!  I love mini getaways.   Hopefully it will be nice fall weather and no snow!  But to get me through my Monday, I had something so delicious, smeared with pumpkin butter, full of toasted walnuts and plump cranberries. Mmmmmm, so good!

But first, wondering what did  this weekend?  Check it out!

Those were for Hubby’s lunch and these my Dears, is for me!!!  See what got me through my Monday.   Bread can get me through anything!!


I made him old fashion Hamburger Rolls, with all white flour and for me I made Cranberry Walnut Rolls with Wheat Flour.  For some reason, which I don’t understand he doesn’t like wheat.  Weird I know!  But I love my rolls, there perfect size for me, or even to share!

His rolls, were really easy to make, 40 minutes, where as mine took a couple of hours, but well worth it!  The Hamburger Rolls, taste to me like a dinner roll, so they would be perfect for a holiday get together.

As you know I am kind of addicted to bread so I kept one Cranberry Walnut Roll for my lunch and put the rest in the freezer for when my bread craving hits!! Here is the 40 Minute Hamburger Roll Recipe, so easy!!!

Old Fashion Hamburger Rolls – Adapted from Taste of Home

Ingredients

2 tablespoons active dry yeast

1 cup plus 2 tablespoons warm water (110° to 115°)

1/3 cup vegetable oil

1/4 cup sugar

1 egg

1 teaspoon salt

3 to 3-3/4 cups all-purpose flour

Directions:

In a large bowl, dissolve yeast in warm water.

Add oil and sugar; let stand for 5 minutes. Add the egg, salt and enough flour to form a soft dough.

Turn onto a floured surface; knead until smooth and elastic, about 3-5 minutes. Do not let rise. Divide into 12 pieces; shape each into a ball Place 3 in. apart on greased baking sheets.
Cover and let rest for 10 minutes. Bake at 425° for 8-12 minutes or until golden brown. Remove from pans to wire racks to cool.

I made these small, so I got 17 rolls, where if you made these a little bigger, you’ll get 12 nice size rolls.

Calories per roll for 17 rolls:

Calories:  141,  Fat: 4.5,  Sodium: 4.1,  Potassium:  4.2,  Carbs:  22,  Fiber: 1,, Sugar:  4,  Protein:  3

Don’t those picture look kind of psychedelic?  I took them in the evening with bad lighting!  Ok, now my personal favorite rolls!!

Cranberry Walnut Bread –  Adapted from La Tartine Gourmande

2 cups bread flour

1 cup whole wheat flour

2 Tbsp butter, at room temperature

1 cup water, lukewarm

2 tsp active dry yeast

2 tsp fine cane sugar

1.5 tsp salt

1/4 cup walnuts, toasted

1/4 cup dried cranberries

Directions:

To toast the nuts, preheat your oven at 400 F.

Place them on a baking sheet and toast for 6 minutes.

Remove to let them cool and chop coarsely.

Sprinkle the yeast on top of 4 Tbsp lukewarm water and leave to froth for 5 mns.

In a bowl, place the flour. Add the salt and sugar and mix together.

Add the butter cut in pieces and mix.

Make a well in the middle and pour the yeast. Mix with the tip of your fingers.

Slowly add the rest of the water. Knead the dough with the palm of your hand until it is elastic and forms a ball.

Cover and let rise in a warm part of the house, until it doubles in size.  About an hour.

Add the nuts and cranberries and knead the dough again.

Form small bread rolls (about 8 or 10, depending on the size, they will rise).  I got 9 rolls at about 3 oz each.

Place them on a baking sheet and cover again to let rise for 30 mns.

Preheat your oven at 410 F.

Brush the rolls with some water and place in the oven for 20 mns or so. The rolls are ready when they have a nice golden color and sound hollow when tapped with your finger.

Remove and let them cool on a cooling rack.

These weren’t to hard, I actually used my hands, no mixer, no bread machine.  Just make sure your cranberries are dry or they’ll make the dough to wet. I had that issue, but it still worked out.

Calories: 184,  Fat:  2.5,  Sodium:  .2,  Potassium:  42,  Carbs: 33,  Fiber: 3,  Sugar:  3.7,  Protein:  6

These rolls are so tasty served with honey!  I used Trader Joe’s Apple Honey and OMG!  So good!  And I also tried one with the homemade Pumpkin Butter, that was awesome too!!  See why I put them in the freezer?  I’ll eat them all!!

Looking at these pictures, makes me think I need to pull one out of the freezer, throw it in the oven and eat it!!  So good, you won’t be disappointed!!!

I didn’t tell  you, I started to make a high fiber bread with flax seed, sunflower seeds, oats and bran and I had it rising (almost done rising) and my dog got after it.  Glad he didn’t eat it!  So I gave up, but felt bad so I decided to make my husband his quicky lunch rolls. Hope he likes them!!

His rolls look pretty!  Mine are bulky!!  But believe it or not there  not dense like your typical wheat bread, there light and kind of airy on the inside!  Which is all the more why I like them, crispy crust, soft middle!   There really good.  Sorry I ate one and didn’t want to waste one by cutting it open, other wise you could see all the walnuts and juicy cranberries!  I’ll show you another time!

Hope you enjoyed the roll show!  What kind of bread do you like?  My personal favorite is a crispy wheat or a crusty Italian, hot with butter dripping on it!  I guess I’ll be making Italian next, but not for a couple of weeks!   Not only does yeast make the bread grow, but it’s makes my a$$ grow too!! So make them as a roll and portion out the sizes, so you can have your bread and eat it too!!!  Enjoy!!!

    Rolls are intimidating for me but this recipe makes them look pretty easy-and yummy too!

      I just started to make bread and if I can do it, anyone can! The Hamburger rolls were really easy!! Give a try! Nothing more satisfying then fresh baked bread, straight from the oven.

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol

There are two methods that I have used  in the past; the chlorine bath and the dish soap bath. This is what I have learned.

My favorite and only way I wash pumpkins now is using dish soap.  It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.

The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.

The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.

PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.

I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

Happy Monday! I want to thank those who have reach Happy Monday! I want to thank those who have reached out to me asking if I am okay. I am doing just fine. I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.

I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!

I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long. 

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.

Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.

Look at this friends! It’s my first Fall vignett Look at this friends! It’s my first Fall vignette. Notice anything that seems a tad early? It’s my first pumpkin from my garden. Can you believe it? They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.

This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
