Apple Pumpkin Oatmeal Raisin Cookies

Hello!

Made it through Monday, but barely, only four more days to go till the weekend!  I am counting the days down, but don’t we all?

Well, I was guilt struck when I noticed I have been slacking on my exercises the past few weeks.  Last week, was the first week I didn’t make my Calorie burn goal, so this week, I am making an extra effort to do so!  So yesterday I had my Chris Fryteg workout and today I did Leslie Sansone’s 2 mile walk.  But for me, I jog, do jump rope so I keep my heart rate up near 135-145.  In 30 minutes I burned 244 calories not to bad!  During my CBS Monday night lineup I’ll do some stretching and ab workout, since my muscles are sore from yesterday.  Speaking of Monday TV, What do you think of Ashton Kutchur in place of Charlie Sheenan?  I like Ashton, but I’m still deciding.  The show isn’t the same, but I still laugh.  I will tell you I love Berta and I hate Ashton’s hair and beard!  Get a cut Dude!  I’m guessing it’s because he will do a makeover on the show and be more clean cut like Charlie was.  Anyway for todays recipe.

I know I said I was going to post yesterdays breakfast, but this my friends is even better!


These are my special creation, completely healthy!  No oil, no butter!  Can’t beat that and a mere 46 calories with frosting!  I love these, and appartantly so do my co-workers!  One minute there was 9 cookies on the plate, next minute they were gone!  Yah!  I love that, glad I kept my share!  So what is in these cookies?

I bet you can guess from the picture.  Fresh Apple and Pumpkin!  I’m so proud of these little cookies.

This was easy and fast!  I made them, baked them and did the dishes in under 30 minutes!  Not to shabby!  These cookies are not your typical cookie, there like an Oatmeal Raisin, soft granola mix and cookie dough all in one!  Oh, I didn’t tell you there name, Apple Pumpkin Oatmeal Raisin Cookies.  Say that 5 times fast!

Apple Pumpkin Oatmeal Raisin Cookies

1 Cup Whole Wheat Pastry Flour

1 tsp. Baking Soda

1/2 tsp. Salt

1 Cup of quick cooking Oats

1/2 Cup Brown Sugar – Unpacked

1 tsp. Ground Cinnamon

1/4 tsp. Nutmeg

1 Egg

1 tsp. Vanilla Extract

1 Cup Shredded Apple

1/2 Cup of Canned Pumpkin – Not pumpkin pie mix

1/2 Cup Raisins

Optional – Nuts (I bet walnuts would be good!)

Maple Cider Glaze:

1/4 Cup Powdered Sugar

Drop of Maple Extract

A drop or two of Apple Cider (Milk or Apple Juice will work to)

Directions:

Preheat oven to 350

Line two baking sheets with parchment paper or grease cookie sheets.

In a bowl add first 7 ingredients.

Add in the egg, vanilla, pumpkin and then mix together.  You need arm strength for this.  Don’t worry if the batter seems dry.  Now add your shredded apple, and give a good mix until all combined, add raisins. Mix together.

Drop by spoon full onto cookie sheets.  I used a cookie scoop.

Bake for 10 – 12 minutes.

Glaze:  Mix all ingredients together and mix until the consistency you like.  If to thin add more sugar, if to dry add more Cider.

Once Cookies are cool, Glaze the cookie.  I just drizzled with a spoon.

Makes 36 Cookies

Note:  Cookie will seems wet, just check the bottom to see if it is lightly browning.

Calories per cookie with glaze:  46,  Fat:  .3,  Cholesterol: 5.1,  Sodium:  38,  Potassium:  36,  Carbs:  11,  Fiber:  1,  Sugar:  6,  Protein:  .9

I really love these cookies!  Next time I may add a cream cheese glaze, or in place of apple, use shredded carrot or zucchini.  These are so versitle.  I might even see what happens if I omit the brown suagr and add Black Strap Molasses, but not sure how that will work.

Try them, you’ll like them!  Guilt Free!  Eat 4 or 5 or all of them!  🙂
