40 Minute Bread, Apple & Fennel Salad and Tomato Soup

October 7, 2011 By Jennifer @ PB and P Design 4 Comments

I said Happy Friday earlier, but now it’s double happy Friday!!!

You don’t even know how dam excited I am for this meal!  I normally post in the morning, but I have to share this with you now!!!  When you see the pictures you’ll understand why.

Doesn’t it look good?  Let me introduce you to the star of the meal!

Opps, I started to cut into it, before I told you about it.  First let me tell you this was so easy, fast and ohhhh, the smell of freshly baked bread in the house.  Is there anything better?  I don’t think so!

I got this recipe from Rebecca of “Foodie with Family”.  She was kind enough to let me share this recipe with you and I am so glad she did.  Somethings you just have to share.   Let me tell you about the delectable homemade bread, it is so tender with a crispy crust and a soft middle and I am to darn excited to go on about it, I can barley control myself.  Tonight it was just my husband and I for dinner and yes, yes, yes we ate one whole loaf of this bread.  He he, I ate one half and he ate the other.  My husband thought I bought the bread, and I said nope, I made it.  He was shocked!  Bread for dinner on a work day?  How did you do it?  Impossible!  Nope not impossible!  Rebecca’s One Hour Sandwich bread, was done, yes completed and on the table in one hour!  This is very dangerous for me, since my downfall is bread!  Rebecca gives the best instructions ever, if I can follow it anyone can.  You have to check her site out!  http://www.foodiewithfamily.com/2010/04/17/one-hour-sandwich-bread/  She has the best recipes!  There is so much on her site I want to make, and she makes it all in directions I understand.  I’m telling you, I never lie, so in that, let me tell you, make the bread!  You just have too!  The recipe makes for two loafs, and that scares me, since I already know tomorrow for breakfast I’m having bread with peanut butter and jam!  For lunch a fat panini and if there is any left over it’s going with dinner.  Then I plan on making another loaf or two or three.  Good thing I stopped counting calories!  I’d give you the recipe, but trust me, read Rebecca’s page, it’s a lot easier to follow then what I’d tell you!  Just do it!!  See why!!

Now for the rest of the meal, I made a pretty quick, Roasted Pepper Tomato Soup with a Fennel Apple Salad.  I love this meal!  It’s so down home cooking, and it wasn’t difficult or hard to make!  First the soup!

I have been making this soup for a few years now, it’s a classic!  It’s thick, creamy, and low in calories!  Filled with all good things!  Here is my recipe!

1.5 tablespoons  olive oil

1 Vidalia onion, chopped

1 carrot, chopped

2 cloves garlic, chopped

Kosher salt and freshly ground black pepper

1 tablespoon tomato paste

1 (14.5-ounce) can fire-roasted diced tomatoes (no sodium if you can find it)

1 (12-ounce) jar roasted red peppers, drained and chopped

2 1/2 cups low sodium chicken broth (I ran out so I used Vegetable Broth in this recipe)

2 teaspoons sugar, optional (not in calculation) (I don’t think you’ll need it,it all depends on the acidity of the tomatoes)

1/2 cup non-fat milk

1/4 cup of Non Fat Plain Greek Yogurt (I didn’t add it because I ran out, but it makes it extra creamy if you do!)

1/4 cup chopped basil or dry will work

Heat 1.5 tablespoons oil in a 2-quart saucepan over medium-high heat. Add onions and carrots and saute until tender, about 5 minutes. Add garlic and saute until just fragrant. Season with salt and pepper. Add tomato paste and cook until just 1 more minute.

Add tomatoes, red peppers, and chicken broth or vegetable and let it simmer for 25 minutes, until the vegetables are tender and the flavors have melded together. Taste for seasoning and add more salt, pepper, and the sugar, if needed. Add milk and yogurt and basil, and puree using a hand held immersion blender until smooth.  If you don’t have a immersion blender pour it carefully in batches in a food processor or blender.

Serve in soup bowls with a sprinkle of basil on top.

Makes about 4-5 cups.

Now the Apple Fennel Salad, which was very sweet, and the bread dipped in the dressing was wonderful!  The fennel and apple go so well together and both in season, so get to the Farmer’s Market and get yours!

Fennel Apple Salad with Cider Vinaigrette

  • 1/2 cup unfiltered apple cider or apple juice
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • 1 large Macintosh Apple, quartered, cored, thinly sliced
  • 1 medium-size fresh fennel bulb, trimmed, thinly sliced
  • 2 cups mixed salad greens
  • 1/2 cup pecans (about 2 ounces), toasted (optional)

Whisk first 4 ingredients in medium bowl to blend; season dressing with salt and pepper. Combine apple, fennel and arugula in large bowl. Toss with enough dressing to coat. Mound salad on 4 plates;

I only made two salads and had plenty of dressing left over.  It makes 3/4 of a cup!

Thats it for my American Classic Dinner.  I find tomato soup and bread very comforting.  The only other soup that compares is my homemade Chicken Noodle Soup, which I’ll show you later this fall.  My guess is this wonderful bread will make another guest appearance with my soup!  Ohhh, I can’t wait!!  So Guys!  Check out Rebecca’s site!  http://www.foodiewithfamily.com/2010/04/17/one-hour-sandwich-bread/

Thank you Rebecca for letting me share this recipe!  It was so good and I am so excited that I made bread!!!  It was absolutely delicious, but I bet you can tell from my overly to excited post!  I tend to get a little crazy when food is involved!  🙂  Ok, check out some more pictures of the star of the show!

Beautiful!  Look at that bread!!

I think the 2nd loaf is calling me right now!!

The butter just melted in the warm crusty bread!!!  You need to make this bread!  One hour and you’ll have fresh, homemade bread!  Who could ask for anything more?  I can’t!!

Have a wonderful weekend!  See you tomorrow with another yummy recipe!

      Hi Alyssa,

This was the first time I ever made bread using yeast and it was very easy! One hour is all it took. I was very impressed with it. It’s a perfect bread for grilled cheese sandwiches too!

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol
🎃
There are two methods that I have used in the past; the chlorine bath and the dish soap bath. This is what I have learned.
🎃
My favorite and only way I wash pumpkins now is using dish soap. It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.
🎃
The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.
🎃
The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.
🎃
Did you get your pumpkins yet?
.
PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

Happy spooky Thursday! I added a few touches of Ha Happy spooky Thursday! I added a few touches of Halloween in my kitchen. I don’t do much Halloween decorations, but I just love to add it to the kitchen. Every time I go to the kitchen it makes me smile.
🦇
To add Fall or Halloween you don’t need to add a lot, just a few touches here and there. I will give a full tour in stories and tag a few items. Majority of the decor came from @krumpetshomedecor and the towels and bat banner from @theblessedpeach

Hello Tuesday! Hope you are doing well. It’s sta Hello Tuesday! Hope you are doing well. It’s starting to feel like Fall here in Northern California. The mornings and evenings are feeling crisp. I can’t get over that we are in the middle of September. Where did the Summer go?
🎃
I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.
🎃
I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

Happy Monday! I want to thank those who have reach Happy Monday! I want to thank those who have reached out to me asking if I am okay. I am doing just fine. I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.
🩵
I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Hi, it’s me Samuel!! I am taking over mamas page Hi, it’s me Samuel!! I am taking over mamas page today because I got the best gift in the whole world and it even came in the mail on my birthday. How did @downlitebedding know? They are so good!
🐾
Downlite Bedding sent me the EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter. Isn’t it beautiful? It’s so soft, cozy, hypoallergenic and it makes me so happy.
🐾
The comforter is 400 thread count, it has moisture wicking and cooling technology to help regulate body temperature, which is perfect since I get warm in the summer with all my hair and I like to be cool when I’m sleeping. A big plus is the comforter is white, I hide very well in it. It’s hard to see me. So mama can’t catch me on her bed.
🐾
The EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter also has a Scotchguard stain release fabric and machine wash and dry. It’s truly an amazing comforter.
🐾
Mama let me do this takeover today because she knows that I love @downlitebedding as much as she does. She said she has never seen me get so excited as I do when we get Downlite Bedding and pillows in the mail. How can I not get excited? It’s like sleeping on a cloud!
🐾
Downlite Bedding was kind enough to give us a 20% discount: DYGEN20
🐾
Have a great day and happy napping!

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.
🌼
I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!
🌼
I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol
🌼
How your garden growing? I lost all my potted plants from the heat. 😩

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long.

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

@bzaar_wholesale has amazing products for your home, great pricing and global shipping. The link is in my bio.

Do you like making charcuterie boards? What do you add to yours?

Hello, hello! It may be 100 degrees outside, but I Hello, hello! It may be 100 degrees outside, but I can’t resist putting out some Fall. Especially when you get new decor from @12timbers. You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.
🍂
Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.
🍂
I just adore the wooden cut out pumpkins from @12Timbers. When I look at them they make me smile. The orange wooden leaf is the perfect piece to bring everything together. This gets me so excited for Fall decorating. Now to finish the rest of the living room.
🍂
12 Timbers is so kind to give me a discount code. It’s good until Saturday at midnight. The code is PBANDP15.
🍂
Have the most beautiful day!

Look at this friends! It’s my first Fall vignett Look at this friends! It’s my first Fall vignette. Notice anything that seems a tad early? It’s my first pumpkin from my garden. Can you believe it? They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. That makes me sad, but at least I have more pumpkins growing.
🎃
I really had fun bringing out some Fall decor. Fall is not my favorite season, as I love Spring and Summer, but Fall is my favorite to decorate for.
🎃
I wanted to share with you my new reversible blocks from @krumpetshomedecor. Aren’t they cute. They would look so pretty on a shelf. The one side says Fall and the other side says Boo! The two wooden pumpkins are also from Krumpets Home Decor.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.
🍋
This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
