Happy Wednesday! Half way through the week! It can’t go any quicker! Hoping this Saturday I go to San Francisco. I want to do all the tourist stuff on the Embaracdero. It’s fun experiencing that stuff. Funny how I live so close to the city and I never go. Do you ever go to the city near you?
I have to tell you am not the kind of person who likes the cooler weather, I’m a summer person, but one thing I like about this time of year is comfort food. Nice healthy, hearty foods! So for my evening Apple dish I made a easy, tasty Chicken and Apple baked dish. I hope you like it as much as my family did! It went fast! I was hoping for left overs! Shucks! Now I have to make lunch!
But before I tell you about my fab chicken dish, I have to tell you last night was my friends birthday, and he loves Creme de Menthe Cookies, but I ran out of sugar,so I couldn’t make them, but did have enough for Chocolate Cupcakes with Mint Butter Cream Frosting. They look good, tasted great, but, I put mint chips in the batter and they fell. They look like little green kisses at the bottom of the wrapper. I was so disappointed. I couldn’t give them to him, glad he didn’t come to work today, but I did take them to work and called them Jenny Flops! Jelly Belly has Belly Flops, so I thought so do I. See how pretty they look.
Another time, I’ll try to make them again. But this turned out great!! I had this chicken with a side of roasted sweet potatoes. Nothing fancy, just roasted in the oven with some olive oil for 30 minutes. I put it on the bottom rack when I was cooking the chicken.
Baked Apple Cider Chicken
16 oz of Boneless, skinless chicken breasts
1/3 cup of apple cider (I think apple juice will be ok too)
1 tsp. of honey
1 tsp. minced garlic
1/4 tsp dijon mustard
1/2 tsp. Thyme
1/4 onion – sliced
3/4 apple – sliced (I couldn’t fit a whole one in my pan)
Directions:
Preheat oven to 375
Salt & pepper chicken and place in a baking dish. Add your onion and apple, surround your chicken with it. Sprinkle with the Thyme.
In a small mixing bowl or pyrex dish, wisk together the cider, honey,garlic and mustard until combined. Pour the sauce over the chicken and onto apples and onion.
Cover the chicken with foil and bake for 30 minutes. Take off the foil and bake uncovered for 15 more minutes or until chicken is cooked through. Also check to make sure you have enough juice in the dish, so it doesn’t dry. If not add little more cider to it.
Serves 4

I would love to go to Vancouver, it’s on my bucket list! Funny how we live so close to places and we never go. I guess life either gets to busy or were just to comfortable staying in our own little town.

Yah, glad I have my co-workers because this was not a healthy cupcake, it was for a birthday! Had to get that out of the house! Eck!!! But they did taste good! I had 1/2 of one, I had to test it! 🙂
Mint and chocolate is definitely one of my absolute favorite flavor combinations…seriously, I can’t be trusted if it’s around. These look pretty fabulous to me!
