Apple Cinnamon Coffee Cake

Today we went to Apple Hill, located in Placerville, CA.  Just at the base of the Sierra Mountains.  We went there to pick some yummy Apples and to get McIntosh Apples, which you can’t seem to find in the stores here in California.  Only 9 growers, grow them in Placerville and there are 100’s of Apple growers in this area.  We couldn’t pick any, but we did get some!

Here are some pictures from my day, plus a quick recipe I made tonight just for you!  It’s is light, flaky and mostly healthy, not to mention, Amazing!  You’ll love it!

These are Hello Kitty shoes someone made for the craft show.  Aren’t they cool?  They were heavy and not in my size!  Darn!!

Lunch for me!  Apple Cider Sundae!  My one splurge a year.  My Hubby’s french fries in the back ground, yes I stole a few!  I bought the sauce, so I can try to duplicate it!  He he!!  So expect that this week!

My purchases of the day!  Can’t you tell I love BBQ sauce?  Especially Habanero!  This stuff is so tasty!  I stock up every year.  You can order online too!

I also bought this apple peeler.  I need one for that box of McIntosh Apples I bought, plus I am going to make sweet potato curly fries with it!  I am so excited, I can’t stand it!!

Waiting for today’s recipe?  I modified it from this cookbook!  Look familiar?  It’s the old Better Homes, red plaid cookbook that my Grandma used.  It’s an oldie but a goodie!

Apple Cinnamon Coffee Cake

1 cup  of Flour

1 tsp of Baking Powder

1/3 Cup of Sugar (I started with 1/2 cup, but after all the sprinkling I only used a pinch of the 1/4 cup left over)

1/2 tsp of salt

1 tsp of ground cinnamon

5 1/2 tbsp of unsalted butter

1 Egg – I used Reddi Egg

1/2 Cup Non-fat Milk

3/4’s of a Medium McIntosh Apple -core, peeled and diced

Directions:

1 Preheat the oven to 375°F. Grease a 9-inch square baking dish

2 In a medium bowl, whisk vigorously together the flour, baking powder, and salt.

3 In a separate small bowl, mix 2 Tbsp.  of the sugar with the cinnamon, set aside.

4 Using an electric mixer, beat the butter with remaining 1/4 cup sugar. Beat in the egg until blended. Add the flour mixture in three additions, alternating with the milk, beating after each addition until just combined.

5 Pour half of the batter in the bottom of the baking dish. Lay the apple slices on the batter so they just cover the batter.  Sprinkle the apples with 1 Tbsp. cinnamon-sugar mixture, reserving 1 Tbsp.to sprinkle on top. Spread the rest of the batter over the apples. Sprinkle the remaining cinnamon-sugar on top.

6 Bake the cake for 23 minutes or until it is golden brown and apples start to bubble at the edges.

Note:  The batter is thick so be patient spreading it!

This will be perfect to share with my co workers in the morning!  Calories you wonder?
