Apple Cinnamon Yogurt Pancakes

I know you’ll get this Sunday morning, but this is actually my Saturday, so I’ll start you off at the beginning.  As I do every morning I read my e-mails, then make Hubby his lunch.  He’s been so busy and tired at work, I thought I would make him this, to make him smile!

 

 Little PB&J sandwiches cut out as hearts. Aren’t they cute?  I like to make his sandwiches so I can lick the peanut butter off the knife.  he he


 

 Then I worked on my header for my blog.  It’s only temporary, but it’s better then what was there.  After that I debated on either making breakfast or doing that Jillian Micheal’s Killer, Legs, Butt and Thighs workout.  I did the workout.  I’ll give my review on that a little later.  All I can say is level one was a little tough.  I guess I am really out of shape!  After the workout I made this!!!

 

 Whole Wheat Apple Yogurt Pancakes with Apple Cinnamon Maple Syrup.  Dam they were so good and very, very filling!  Try it, you’ll be pleased, trust me!

 

 I love how the sun makes them shine!  Pancakes make for nice pictures.  Ready for the recipe?

 

 Apple Cinnamon Yogurt Pancakes – Adapted from my Whole Wheat Yogurt Pancakes – serves 2 or makes 10 pancakes

Ingredients:

1 Medium Apple – peeled, cored and diced into small pieces
3/4-cup 0% Greek Yogurt ( I love Trader Joe’s Greek Yogurt)
1/2-cup Egg whites (I used the ones in the container)
1/2-tsp Baking Soda
 1/2-cup Whole-Wheat Pastry Flour
1/2-tsp Vanilla Extract
1/4 tsp of Cinnamon
1/2 tsp sugar

Apple Cinnamon Maple Syrup
1 Medium Apple – peeled, cored, and sliced in pieces (like you would do for an apple pie)
1 Tbsp of Butter – I used Brumble & Brown
1/2 tsp. Cinnamon
1/2 Tbsp of Cornstarch
1/4 Cup of Apple Juice (I used Trader Joe’s Unfiltered Apple Juice)
1 tsp. of Brown Sugar – unpacked

Directions:
Take your apple and put in a microwave safe bowl, sprinkle with cinnamon, cover wih plastic wrap and microwave for 1 minute.  Leave in microwave to cool.

Meanwhile, start your Syrup.  In a medium sauce pan add butter, apples and cinnamon.  Once butter is melted add in your cornstarch, brown sugar and apple juice.  Stir until thick and bubbly, about 4 minutes.  Stir in your Maple Syrup and set on low heat and cook for about 10 minutes.

While the syrup is warming you can start your pancakes.

In a medium bowl, mix Greek Yogurt, Egg Whites & Vanilla Extract. Give it a good stir.  (I’m a one bowl person) Add on top of mixture the  Flour, Baking Soda, Sugar, & Salt.  Stir until combined.

Take your apples from the microwave and drain if there is any juice and then gently fold into pancake batter.
Place 1/4 cup batter onto non-stick skillet (I spray with cooking spray for each batch) and cook till bubbles start appearing through the top of the pancake and then flip.  NOTE: Cook on medium heat and I flattened out my batter with the spatula to cook more evenly.

About 2 minutes on each side.  Flip when browned.  I got 10 pancakes out of this batter, must be because of the apples?

To assemble the pancakes.  I used a slotted spoon and placed some apples in between the pancakes and the rest on top, and then drizzled the syrup over pancakes.  The syrup made smidge over 1/4 cup without the apples.  The syrup is sweet so I only used about 1 1/2 Tbsp.

Calories for 1 serving of pancakes, thats 5 YES 5 pancakes each!  This could serve 3, but I’m to greedy!

Not bad stats, if you used sugar free syrup, there virtually be no calories in the syrup, but I try to stay away from that stuff, it gives me a stomach ache.

 

 There so pretty, almost to pretty to eat, almost I said!!  They were hella good!  Look at the little apple chunks inside.

Since you’ll read this on Sunday, I am off to Apple Hill.  Apple Hill you wonder?  It’s a bunch of Apple, Fruit, and Vegetable growers that get together and have fruit stands, apple picking, rides, trout ponds, pumpkins, mazes, crafts, animals, cider, food and more.  You can spend two days going through all of it.  It’s located at the base of the Sierra Mountains in Placerville, CA.  It’s my favorite fall place to go and you know what happens there?  Apple mania!!  I’ll have so much inspiration, I just may have apple week next week.  However Pumpkin is still on the brain!  So I’ll start apple week off with those beautiful, tasty pancakes all for you!  Enjoy your day!!!
