But before I begin, I have to tell you a joke my friend Andrea told me. “Why are kids like farts?” “Because you can only stand your own” He he!! Sorry, it was geeky but I thought it was funny. Ok, I’m cracking myself up now. So stupid!
Well Pumpkin week is coming close to the end (so sad), and the one thing we didn’t discuss is the benefits of pumpkin. Did you know Pumpkins are rich in beta-carotene, which helps you prevent from certain type of cancers. The potassium content is more in pumpkin that helps to reduce hypertension. The zinc in pumpkin boosts your immune system. It is rich in fiber to prevent one from cancer and heart diseases. The phytosterols in pumpkin will reduces the risk of prostate cancer. The anti-oxidants are more in pumpkin, which helps you to glow your skin and reduce the signs of aging. So include more pumpkins in your healthy diet to get more benefits.

Well now that we had our education for the day, let’s get down to the nitty gritty! What recipe do we have for pumpkin today? First let me tell you, it was 100 degrees today and my Husband would of killed me if I turned the oven on. So what could I have in this heat? I got it, a smoothie!!! I never made a pumpkin smoothie, but let me tell you it turned out great. I just kind of winged it!
It was fast, simple and smooth! Not to mention Healthy for you!!! I had this instead of my afternoon iced coffee.
Pumpkin Smoothie
1 cup of ice
1/3 cup of canned pumpkin
1/2 a Large Frozen Banana
1 tsp of Maple Syrup
1/3 cup of Plain Non-Fat Greek Yogurt (But I bet vanilla would be good to)
1/3 cup of non-fat milk (milk of your choice will work)
1/3 Cup of Apple Juice (I used unfiltered Apple Juice from Trader Joe’s)
Throw all the ingredients and blend away until smooth. Pour into a glass and enjoy!
Makes 2 – 1 cup servings. This would be good after a workout!
Calories per 1 cup: 104, Fat: .2, Cholestrol: .8, Sodium: 33.6, Potassium: 196.2, Carbs: 20, Fiber 2.2, Sugar: 12.7, Protein: 5.6
