I had and still have no idea what to make for dinner and my family said there going to Burger King, Yuck! So it’s fend for yourself night, meaning I get to make whatever I want for me. Yippee!! I love those kind of nights! But you know what I have no idea what to make! I was debating about a hamburger, but I didn’t want bread, then I thought of oatmeal, or eggs, but nothing sounds appealing. Does that ever happen to you? Then it happened! I saw this little guy looking at me.
When I saw him, my first thought was french fries! And that my friends is the only thing I could think of! So needless to say my boys are in the oven as I type this! Mmmmm, all sweet, and crispy, well hope it’s crispy, well see in 40 minutes. Guess what? There crispy, see.
I’m serving these bad boys with spicy ketchup, so I get the best of both worlds. Sweet and Spicy baby!
But still I probably need a side of something, like protein. Maybe I’ll make some scrambled eggs? I don’t know, maybe just a side of greek yogurt? Dam I can’t decided. What should I have?? Ok, I got it! I’ll have some chicken from last nights BBQ. That will be perfect. Just pop it in the oven for about a minutes and it’s done.
Whatcha think? Wondering how to prepare a Butternut Squash for french fries? Here are the steps. First, cut the ends of the squash off. The peel with a vegetable peeler.
Then scrape out the seeds, just like you would a pumpkin.
Then cut into fry shape and lay on a paper towel and sprinkle with salt. Let them sit like that for about 5 minutes. That sweats the moisture out of them. Then dab them with a paper towel again. Place on a baking sheet with parchment paper or spray with none cooking spray. Sprinkle with salt, pepper and cinnamon. Place in the oven for 20 minutes, then flip them and bake for another 20 minutes. Watch carefully, so they don’t burn. I had a couple crispy guys!
Now eat them up!! By the way, they taste very much like Sweet Potato Fries, so if you like them, you’ll love these!!!
Butternut Squash French Fries
1 Butter nut squash – sliced into french fry slices
Sprinkle of salt,pepper and cinnamon
Preheat oven to 425
Slice the ends off the squash, and then cut it in half width wise. Peel squash with a vegetable peeler or carefully with a knife. Cut the round bottom piece in half lengthwise and remove seeds.
Using a crinkle cutter or a knife, carefully cut squash into spears/French-fry shapes. Pat spears firmly with paper towels to absorb excess moisture. Sprinkle evenly with salt.
Lay spears out on a layer of paper towels, and let stand for at least 5 minutes, to allow the salt to draw out any excess moisture. Then pat with paper towels again. Sprinkle with salt, pepper and cinnamon.
Place on a baking sheet with nonstick spray, and then lay spears flat on it.
Bake in the oven for 20 minutes, and then carefully flip spears. Bake for about 20 minutes longer, until tender on the inside and crispy on the outside. Enjoy!
