Hi Everyone,

I teamed up with #WeekdaySupper to share with you a week’s worth of tasty, quick meals that is sure to please the palate and the belly.  Today I have for you a super simple, flavorful salad that is loaded with chicken, black beans, corn and McCormick’s Smoky Applewood BBQ Chicken with Bacon Skillet Sauce.  Amazing!  No dressing needed with this salad.

This salad took less than 15 minutes to make and tastes out of this world. It has a nice smoky southwestern flavored barbecue sauce with hints of bacon. Oh you know me and bacon! To zip up my salad and to keep going with the southwestern flavors I decided to add a little bit of black beans and corn. Black beans and corn are a perfect complement to this salad. But you know what? Skip the lettuce and add it to a flour tortilla and you have some awesome tacos! I did that the next night with my leftovers. I added a pinch of hot sauce and sour cream and oh man was it good!!

Have you tried McCormick’s Skillet Sauces? I love the Smoky Applewood BBQ Chicken with Bacon Skillet Sauce. It has a sweet, smoky flavor with a slight onion flavor and hints of wonderful bacon. This would also make for a great simple chicken dinner, sided with a salad and maybe some potato salad.

Barbecue Chicken Salad

A simple, sweet smoky barbecue chicken salad made with black beans and corn.
Ingredients
  • 1 lbs. chicken, skinless boneless, cut into bite size pieces
  • 1 tbsp. olive oil
  • 1 cup black beans, drained, rinsed
  • 1 cup corn, frozen
  • 1 7 oz. pkg. McCormick Smoky Applewood BBQ Chicken with Bacon Skillet Sauce
  • 8 cup romaine lettuce, chopped
Instructions
  1. In a large skillet, add olive oil and chicken. Cook chicken until no longer pink; about 10 minutes. Add black beans, corn and McCormick Simmering Sauce. Cook for 5 minutes or until the corn is thawed.
  2. Evenly divide the lettuce between 4 plates and evenly top with chicken mixture.

Grilled Pork Tenderloin with Memphis Style Rub

Hi Everyone,

I have to say I have been on quite a barbecue quick lately.  I think it is the California warm weather we have been getting.  So with that said I just had to make yet another barbecue recipe. I was inspired to make today’s recipe by watching Diners, Drive-In’s and Dives on Food Network.  I watch Guy go to all of these wonderful little diners that make the most delicious looking meals.  Well on one episode it was all barbecue.  I love watching the chefs make rubs, slow cook the meat and then cut and serve!  Well I had to give it a try, I never made a rub before, but I do know I love it when I order  it at restaurants.  So today I made for you the first time ever on PB and P, Memphis Style Rub, that has been slathered all over a pork tenderloin.  OH MY GAWD!!!!!!  I love it!!
Memphis Rubbed Pork Tenderloin
This meal exceeded my expectation! The pork turned out tender, with a nice crispy crust. I debated about slathering barbecue sauce at the end, but then decided against it, glad I did. The rub is slightly sweet, savory and has just a hint of heat from the cayenne pepper. The best part is the ingredients are pretty basic and you probably already have most of it in your pantry. It’s made with paprika, garlic powder, onion powder, chili powder, brown sugar and a few more spices. It’s just amazing!! Plus to boot, you have leftovers to use it on other things!
Memphis  Style Rub
I slathered the rub on my pork and let it marinate for about 4 hours, but you could so do this overnight if you please. I cooked the pork on my charcoal grill, but I gave you directions for a gas grill, because I think that is what most have at home. The directions are pretty much the same, just be sure to watch the pork and rotate it to make sure it doesn’t burn.

Once the pork is cooked and reaches 160 degrees, I let it sit at room temperature for 10 minutes, just so the juices flow back into the meat. Then I thinly cut it and served it with a side of BBQ sauce, but we really didn’t use it. Honestly it doesn’t need it. I have to admit this is one of my new favorite pork dishes and I can guarantee I will be making it again.  I’m thinking different kind of sandwiches!  Oh yah, you know me and sandwiches!

Grilled Pork Tenderloin with Memphis Style Rub

Tender, juicy pork tenderloin that has been marinated in savory, slightly sweet with a kick of heat Memphis style rub.
Ingredients
  • 1½lbs. pork tenderloin
  • Memphis Rub:
  • ¼ cup paprika
  • 2 tbsp. garlic powder
  • 2 tbsp. chili powder
  • 1 dash cayenne pepper (add more to make spicy)
  • 1½ tbsp. salt
  • 1½ tbsp. black pepper
  • 1 tbsp. onion powder
  • 1 tbsp. celery seeds
  • 2 tbsp.brown sugar
  • ½ tbsp. dried oregano
  • ½ tbsp. dried thyme
  • ½ tsp. cumin
  • 1 tsp. dry mustard
  • 1 tsp. ground allspice
Instructions
  1. In a bowl, add all of the Memphis Rub ingredients. Use about a quarter of the mixture and rub it all over your pork and refrigerate for up to two days. I did it for four hours.
  2. Preheat grill to medium low heat. Add pork to grill and cook for 7 minutes, rotate to the side and cook for 6 minutes, rotate and cook for 5 minutes. Make sure temperature registers to 160 degrees. Take pork off grill and let it rest for 10 minutes before cutting.
  3. Serve with a side of your favorite barbecue sauce if desired.

I didn't add the calories to the rub, because there are barely any.

Today I am re-making, re-improving one of my all time favorite salads, the Barbecue Chicken Salad with BBQ Ranch Dressing.  I swear this is one salad that I could eat everyday!!  Psst…  I ate it for dinner, lunch then dinner again.  he he

This salad has it all, chicken, black beans, corn, avocado, tomatoes, cucumber and my favorite part healthy BBQ Ranch Dressing. Oh man is it good!! It’s filling, healthy and just loaded with flavor. If you’re a frequent reader you will know I love BBQ and Southwestern flavors,so why not put them together for this classic salad?

The dressing is my favorite part, it’s made with greek yogurt, barbecue sauce and ranch seasoning. I love how thick and creamy it is without all of the calories. It’s spoon licking good!!  Definitely better than store bought without all of the calories!  Try the dressing and dip chicken in it, so good!
Barbecue Ranch Dressing
For the chicken, I marinated my chicken in chiavetta’s marinade. But I didn’t put that in the recipe because I know it is an east coast, maybe even just a Buffalo, NY thing? So in the recipe I put cooked chicken. A rotisserie chicken would be perfect in this recipe or leftover chicken from another meal.

A light, refreshing, healthy salad made with black beans, corn, avocado and topped with a low calorie barbecue ranch dressing.
Ingredients
  • Dressing:
  • 6 oz. greek yogurt, plain
  • 2 tbsp. barbecue sauce (your favorite kind, I used Stubbs Spicy)
  • 1 tsp. Hidden Valley Ranch seasoning, packet
  • ½ tsp. milk (optional)
  • Salad:
  • 4 cups romaine lettuce, shredded
  • ½ cup corn, fresh or frozen (thaw if frozen)
  • ½ cup black beans, cooked, rinsed, drained
  • 2 plum tomatoes, seeded, diced
  • ½ cup cucumber, peeled, diced
  • ½ cup avocado, diced
  • 8 oz chicken, skinless, boneless, cooked, diced
Instructions
  1. To make dressing: In a small bowl add greek yogurt, barbecue sauce, ranch seasoning and milk. Mix until combined; refrigerate until ready to use.
  2. Divide between two plates romaine lettuce, corn, black beans, tomato, cucumber, avocado and chicken. Top with barbecue ranch dressing

I originally made this recipe a couple of years ago on my blog, but this version is so much better.  You can check out the old recipe here.  I think you will see the improvement.  I enjoying re-making my old recipes.  It’s funny how you grow and learn when it comes to cooking and how can take something that you thought was so perfect and make it even better.  I guess there is always room for improvement.  Back then, nothing could top my Barbecue Chicken Salad, but now, the salad was topped with this one!  :)  So much better!!

Barbecue Season is here!

Happy Sunday to you!  I have to tell you I love Sundays!  It’s a day to relax, do a little baking in the morning, do some gardening work in the day and the best part heating up the barbecue and enjoying a grilled cooked dinner.  So with that said, I thought I would share with you some of my all time favorite barbecue recipes along with a few from my fellow bloggers.

Skinny BBQ Recipes
Lets kick up the party with one of my favorite splurge meals, burgers. Oh how I love burgers! I don’t think there is a burger that I met that I didn’t like. This is my Caprese Burger. When I think summer I think of fresh tomatoes and basil and of course it should be topped with mozzarella cheese. Amazing!!!

This is one of my newest favorite salads, Grilled Vegetable and Tri-Tip Salad. After all grilling isn’t just for steak, but veggies too! I love veggies on the grill!!! I could just eat that as a meal and I would be very happy!

Comment:  Every Sunday we would all jump in the station wagon for the trip to Grandma & Grandpa Adams’ house for dinner. Grandma was a great cook and her fried chicken was the best I’ve ever tasted. She always served mashed potatoes and green beans, and for dessert there was homemade vanilla ice cream! She passed away when I was young and I still miss her and her cooking. Last Sunday while my Hubby and I were watching the nail biter 49r’s and Green Bay Packers game, we were in need of some spice, BBQ and finger food!!  So during half-time I whipped together the most delicious appetizer that satisfied our cravings.  This is my BBQ Chicken Potstickers.

These little potstickers are a breeze to whip together and they taste oh so good. The chicken in the potsticker is tender, spicy, saucy and perfect for any BBQ lover. The wonton is crispy on the bottom and has nice soft shell (noodle). The perfect little bite without the calories! Speaking of calories, they are only 35 calories a potsticker.

To make the potstickers all I did was take some already cooked chicken and diced it super small. I added one of my favorite barbecue sauces, which is Stubbs Spicy All Natural Bar-B-Q Sauce and mixed it with the chicken and for a little extra pop of flavor, I added some finely diced scallions. I added my mixture to the middle of my small square shape wonton wrapper and then fried it in one tablespoon of olive oil and then I steamed them. I am pretty proud of these potstickers. It was the first time I actually fried and steamed a wonton, normally I just bake them.

Don’t you love the shape of my potstickers? Super easy to make. I folded each wonton corner to corner, and then folded the outside edges to the corner. It makes a cute little purse shape. You can also just fold the corner over and it will be just as cute!  I want to experiment with making different shape ones.  It’s kind of fun!!

A low calorie, steamed wonton filled with chicken and Spicy BBQ sauce, served with a side of Spicy BBQ sauce.
Ingredients
  • 4 oz chicken, cooked, shredded small
  • 3 tbsp. scallions, finely chopped
  • ¼ cup Stubbs Spicy BBQ Sauce
  • 20 small square wonton wrappers
  • 1 tbsp. olive oil
  • ¼ cup water
Instructions
  1. In a medium bowl add chicken, scallions, and BBQ sauce. Mix together until well blended.
  2. In a tiny bowl, add some water. This is for sealing the edges of your Won Tons.
  3. Place 1 tsp. of mixture in WonTon wrapper, take your finger and dip in water and place along the edges of the wrapper (this will be the glue to seal the wrappers together. Fold each Won Ton corner to corner, and then fold outside edges to corner. Do the same for the remaining wrappers.
  4. Spray a large skillet with cooking spray and add the olive oil. Place skillet over medium heat. Once hot, add the dumplings to the pan. Make sure they are not touching or crowded together. Let the dumplings cook, for 2 minutes, or until bottom is golden in color. Add ¼ cup of the water and cover. Reduce the heat to low, and allow the dumplings to finish cooking by steaming, another 2 to 3 minutes. Once done, gently remove the dumplings from the pan. This may have to be done in batches, but no need to add additional oil, just add more water when ready to steam.
  5. Serve with Stubbs Spicy BBQ Sauce or Ranch Dressing

BBQ Chicken Potstickers

I was inspired to make these potstickers because the fine folks of Stubbs All Natural Bar-B-Q Sauce asked me to review their BBQ Sauce, and me, being the condiment person that I am, I couldn’t say no. I have to admit, I have had Stubbs before and I love it! But not only do I like Stubbs for their flavor, but they use all natural ingredients, NO MSG, NO high fructose corn syrup and is gluten-free. So I feel good having their BBQ Sauce.  Their sauces are rich in flavor, thick and perfect on chicken, steak, salads and dipping!!  Earlier this week when I posted my Barbecue Chicken Apple Salad, I was asked what BBQ sauce did I use?  It was Stubbs!  Not only was it good on my salad, but it was great on my quesadilla which was made with apples, Stubbs BBQ Sauce and cheese!  See Stubbs even goes with apples!  :)  Stubbs All Natural also makes spice rubs, but I couldn’t find them at my store, but I’ll keep looking.  I want to make a roasted chicken using it!  Yummers!
