A Chipotle bowl full of flavor and spices filled with black beans, corn, chicken, sweet potatoes. Makes for a quick and healthy lunch or dinner.
Serves: 1 Bowl
  • 2 cups romaine lettuce, shredded
  • ½ cup tomatoes, diced
  • ¼ cup black beans
  • ¼ cup corn
  • ⅓ cup sweet potato, cooked
  • 2 oz chicken, cooked
  • 2 tbsp. salsa
  • 2 Tbsp. greek yogurt
  • 2 tortilla chips, broken up
  1. In a microwave safe bowl add beans, corn and sweet potato and microwave for about 1 minute or until warmed.
  2. In a bowl add the lettuce, tomatoes, chicken, black beans, corn and sweet potato. Top with salsa, greek yogurt and chips.
