Banana Nut Pancakes

Serves: 8 pancakes
Ingredients
  • ⅓ cup Greek Yogurt, plain
  • 2 egg whites
  • ½ banana, mashed (about ¼ cup)
  • ½ tsp vanilla extract
  • ½ tsp baking soda
  • ⅓ cup whole wheat pastry flour
  • ½ tsp sugar
  • ¼ tsp salt
  • ½ tsp.cinnamon
  • ¼ cup walnuts, chopped
Instructions
  1. Preheat oven to 425
  2. Spray donut pan with cooking spray, set aside
  3. Mix Greek Yogurt, banana, egg whites & vanilla Extract into a small bowl
  4. In a separate bowl combine flour, baking soda, sugar, cinnamon & salt
  5. Combine and whisk till evenly mixed. Fold in walnuts.
  6. Spoon the batter into prepared donut pan, filling about ⅔'s full.
  7. Bake for 6 minutes
