Flank Steak with Spicy Chimichurri Sauce

Tender juicy grilled steak served with a slightly spicy chimichurri sauce. Perfect for eating by it's self or on tacos or a sandwich.
Serves: 6 3 oz servings
Ingredients
  • 1¼ lbs. flank steak
  • 1 cup finely chopped fresh flat-leaf parsley
  • 3 cloves garlic
  • ½ cup extra-virgin olive oil
  • ¼ cup red wine vinegar
  • 2 tbsp. chipotle in adobo
  • 1 tbsp. smoked paprika
  • ½ tsp. red pepper flakes
Instructions
  1. Let flank steak sit out to room temperature, about 20 minutes.
  2. Preheat grill to medium heat
  3. In a blender or food processor, add parsley, garlic cloves, olive oil, red wine, chipotle in adobo, smoked paprika and red peppers. Process until blended.
  4. Place flank steak on grill and cook each side for 5 minutes. Take off the grill and let it rest for 5 minutes. Cut thinly against the grain, sprinkle with parsley if desired and serve with chimichurri sauce.
Notes
Note: You can make the chimichurri sauce in advance.
