Antipasto Salad #hometailgate

The perfect tailgating finger food tray made with mozzarella balls, artichokes, peppers and Italian Salami, served with a simple balsamic vinaigrette..
Serves: 6 servings
Ingredients
  • 4 cups romaine lettuce, roughly chopped
  • 14 oz, can artichoke hearts, drained
  • 12 oz, jar roasted red peppers, rinsed, cut into strips
  • ½ cup pepperoncini, rinsed, whole or sliced
  • 4 oz. pkg, Sopressata
  • 1 cup cherry tomatoes
  • 1 cup mozzarella, fresh
  • Salad Dressing:
  • 4 tbsp. red wine vinegar
  • 1 tsp. dijon mustard
  • 1 dash pepper
  • 1 dash salt
  • ½ tsp. oregano, dried
  • ⅓ cup olive oil
Instructions
  1. In a bowl, add red wine vinegar, dijon mustard, pepper, salt and oregano. Whisk in olive oil. combined.
  2. Arrange all of the salad ingredients onto a large platter. Serve with salad dressing.
