Mini Jalapeno and Cheese Egg Bites

Healthy, low calorie egg bites filled with a pickled jalapeno and cheese.
Serves: 24 mini egg bites
  • 1 cup egg substitute or 4 eggs beaten
  • ¼ cup skim milk
  • ¼ tsp ground pepper
  • 24 pickled jalapeno slices
  • ¼ cup cheddar cheese, lite, shredded
  1. Preheat oven to 350°F.
  2. Spray a mini muffin pan with cooking spray.
  3. In a medium bowl beat together eggs, milk and pepper, until combined.
  4. Add one jalapeno to each muffin tin and evenly divide the cheese between each muffin cup. Pour egg mixture into each muffin tin.
  5. Bake for 15 minutes or until eggs are set.
  6. Remove from the oven and let the pan sit for a few minutes. Using a knife, carefully run the blade around each muffin cup. Scoop the egg bites out and serve.
