Chocolate Zucchini Beanie Brownies
- 1 15 oz can black beans, rinsed and drained
- ¾ cup egg substitute or 3 eggs
- 2 tbsp coconut oil or canola oil
- ½ cup unsweetened cocoa powder
- ½ tsp baking powder
- 1 tsp vanilla extract
- ½ cup brown sugar
- ½ cup semi-sweet chocolate chips ( I used mini chocolate chips)
- 1 cup zucchini, grated and patted dry
- Cooking spray
- Preheat oven to 350F
- Spray an 8 x 8 brownie pan with cooking spray; set a side.
- In a food process or blender add all the ingredients, except chocolate chips and zucchini. Process until smooth.
- Fold in chocolate chips and zucchini
- Pour batter into prepared pan and bake for 30 - 35 minutes, insert a toothpick, if it comes out clean, brownies are done.
- Leave in pan to cool before cutting.
