Chocolate Cherry Glazed Donuts

A light, fluffy baked chocolate donut filled with cherries and topped with a sweet glaze.
Serves: 18 donuts
  • 1¾ cups cake flour - sifted
  • ¼ cup unsweetened cocoa powder
  • ½ cup granulated sugar (I used NuNaturals Presweet Tagatose)
  • 2 tsp. baking soda
  • ¼ tsp. espresso powder
  • 1 tsp. salt
  • ⅔ cup non-fat milk
  • 2 tbsp. maraschino cherry juice
  • 20 maraschino cherries, roughly chopped
  • ½ cup egg Substitute or 2 eggs
  • 2 tbsp. butter, melted (I used Brummel & Brown)
  • For glaze
  • ½ cup powdered sugar
  • 1 tbsp. maraschino cherry juice
  1. Preheat oven to 325°F. Spray three 6-cavity donut pans with nonstick cooking spray.
  2. Sift together cake flour, cocoa powder, sugar, baking powder,espresso powder and salt in a large mixing bowl. Whisk in milk, cherry juice, eggs, and butter and beat until just combined. Fold in chopped cherries. Fill each donut cup until about ⅔ full.
  3. Bake 8-10 minutes, or until the top of the donuts spring back when touched. Cool in pan for about 2 minutes before removing from pan.
  4. Meanwhile to make the glaze; in a bowl add powdered sugar and cherry juice; mix until combined. If you want a thicker glaze, add more powdered sugar. Drizzle glaze over donuts. Best served fresh on the same day.
