ChocoBanana Frozen Yogurt Bites

A healthy, chocolate, frozen, fudge like snack made with banana's, yogurt and peanut butter and topped with a strawberry.
Serves: 18 mini muffin size bites
Ingredients
  • 1 large banana
  • 1 cup greek yogurt, plain
  • 3 tbsp. unsweetened cocoa powder
  • ¼ tsp. stevia
  • 1 tsp. vanilla extract
  • 1 tbsp. coconut oil
  • 1 tbsp. peanut butter, creamy
  • ⅓ cup strawberries, sliced
Instructions
  1. Line a mini muffin pan with cupcake liners, set aside
  2. In a blender add all of your ingredients, except for the strawberries. Process until smooth, you may have to scrape down the sides of the blender.
  3. Add the banana batter into the mini muffin cups. With a small spoon smooth the tops of the batter. I also used a toothpick to swirl around to make sure there are no air bubbles.
  4. Top the banana batter with strawberry slices.
  5. Place the muffin pan in the freezer and freeze for at least one hour. Then store in a freezer safe baggie.
