An Italian appetizer made of fresh toasted bread topped with fresh tomatoes, basil and Parmesan cheese.
Serves: 14 Slices (serves 4)
Ingredients
  • ½ french baguette (173 grams)
  • 1 tbsp. + 1 tsp olive oil
  • 1 clove garlic
  • 3 Plum Tomatoes, seeded, diced
  • 10 basil leaves, sliced thin
  • 1 tbsp. Parmesan cheese
  • salt & pepper to taste
  • Optional Topping: Drizzle of Balsamic Glaze
Instructions
  1. Preheat broil to high, line a baking sheet with parchment paper; set a side
  2. Cut baguette on a slight diagonal about ¼" thick. Place bread on to parchment paper. Place 1 tablesppon of olive oil in a bowl and with a pastry brush, brush each slice of bread on one side only. Take the garlic and rub it on to the bread. This is to give the bread a slight garlic taste. Place bread in the broil for 2 minutes until lightly crispy.
  3. Meanwhile, add diced tomatoes and basil to a bowl and drizzle with 1 teaspoon of olive oil. Mix together, season with salt and pepper to taste.
  4. Add tomato mixture to the top of bread and sprinkle with Parmesan Cheese.
  5. Optional: Top with a slight drizzle of Balsamic Glaze
  6. Serve and Enjoy
