Today I teamed up The University of California, Davis, in partnership with the Frozen Food Foundation, to share with you the benefits of frozen fruits and vegetables. As you know I am a huge fan of frozen fruit and vegetables. I love frozen fruit for my smoothies and frozen vegetables in my soups, stews and side dishes. Today for you I have the perfect Thanksgiving side dish using one of my favorite vegetables, frozen corn.
This is one cheesy, delicious spin on traditional corn. It’s made with goat cheese, cheddar cheese, milk and butter. It is rich, pretty low in calories and sure to please you and your guests.
Did you know that freezing fruits and vegetables is nature’s pause button and an easy way to combat things like the cost of fresh produce, the cost of fresh ‘out of season’ produce and issues like fresh fruits and vegetables spoiling before you’re able to prepare and eat them. Plus they are just as nutritious as the day they were freshly picked. You can’t beat that!
When making my cheesy corn dish, I placed my frozen corn in my baking dish, topped it with goat cheese, milk, butter and cheddar cheese. Here is a picture of it before I placed it in the oven.
I baked it in a 350 degree oven for 35 minutes, until the cheese was melted and the corn was cooked through. This dish exceeded my expectations and the best part is that it doesn’t taste like it was frozen. It tastes like it was freshly cut off the cob. Here’s a picture of it fresh out of the oven.
- 16 oz bag frozen corn
- 1 tbsp. butter, melted
- 2 tbsp. non-fat milk
- 2 oz goat cheese
- ¼ cup cheddar cheese, shredded
- cooking spray
- Preheat oven to 350 degrees
- Spray a baking dish with cooking spray; add corn and scatter goat cheese in the corn.
- In a microwave safe bowl, add butter; and melt for about 20 seconds. Add the milk, mix well. Pour butter mixture over corn. Sprinkle corn with cheddar cheese; mix well.
- Cover baking dish and bake for about 35 - 37 minutes or until corn is cooked and cheese is melted.
- Serve warm
