and Roasted Fingerlings with Capers and Dill

These potatoes are deeeeelicious! They are roasted fingerlings flavored with fresh dill and capers. The capers add a nice vinegar flavor without being overwhelming. They are the perfect picnic food because it does not contain mayonnaise or eggs, plus it’s healthy too. It actually tastes like little baked potatoes.  Yummy!!!


Roasted Fingerlings with Capers & Dill

Easy roasted potatoes seasoned with fresh dill and topped with fresh capers. The perfect side dish and perfect for a picnic!
Serves: 8
Ingredients
  • 2 lbs. fingerling potatoes
  • 3 tbsp. extra virgin olive oil
  • 1 tsp. ground pepper
  • 2 tbsp capers, and add a pinch of juice from the jar
  • 2 tbsp. dill, chopped
Instructions
  1. Preheat oven to 400 degrees
  2. Wash and scrub the potatoes and place in a bowl. Add olive oil and mix the potatoes until they are coated.
  3. Place potatoes on a baking sheet and sprinkle with ground pepper; bake in the oven for 30 minutes or until potatoes are cooked through. Flip the potatoes half way through.
  4. Ad potatoes in a bowl and add capers and dill, mix well.
  5. Serve warm or cold
