Strawberry, Mango and Cream Smoothie

Hi Everyone,

Today is Smoothie Tuesday, after all I couldn’t go a week without a smoothie.  But before I get to my smoothie, I have a little Samuel story for you.  You know that wonderful feeling of freshly washed sheets?  Nothing like getting into a bed with fresh smelling sheets that are crisp and perfect.  Well, I washed my sheets and started to make my bed.  I looked behind me and there was my dog Sampson, sitting in the doorway staring at me.  He just sat there and watched me tuck all the corners, fluff the pillows and carefully placed my throw pillows on the bed.  My bed was just perfect!  He looked at me and I gave him that look, don’t you do it!  He just sat there but I knew what he was thinking, wam, he went running and started bouncing on my bed.  Sheesh, so much for a perfect looking bed.  How does he know?  I guess he likes a freshly washed bed too!!

Now onto today’s smoothie. This is my Strawberry, Mango and Cream Smoothie. Oh boy is this good. It’s creamy, thick and has the perfect balance of mango and strawberry. You can actually taste everything with every sip. I have seen mango and strawberry smoothies, but I never had one. I think I have been missing out on this one! So glad I finally made it.

The smoothie is made with frozen pineapple, strawberries a pinch a vanilla extract, stevia, unsweetened coconut milk and greek yogurt. I blended it all together and came up with this delicious summer time smoothie. It was perfect to get me out of the winter blues  I have been having. My Husband always asks, why do you make smoothies in the winter? Aren’t they a summer drink? I tell him no way, I can have one everyday and they are so good it’s like having dessert. He says ok, then I’ll take one! Silly man!

Strawberry, Mango and Cream Smoothie

A creamy, thick, healthy, refreshing smoothie made with mango and strawberries.
Serves: 2¼ cups
Ingredients
  • ½ cup mango, frozen
  • ½ cup strawberries, frozen
  • 1 cup unsweetened coconut milk or non-fat milk
  • ½ cup greek yogurt, plain
  • ¼ tsp. vanilla extract
  • ¼ tsp. stevia (to taste)
Instructions
  1. Add all ingredients into a blender and process until smooth.

Well that’s it for me today!! I have been trying to save money and use what I have in my house, so I need to come up with a dinner that will make my Husband and I happy. This is going to be hard. Eck!!
