Happy Smoothie Monday! Today I am so glad that I have a day off from work. Woohoo! Not sure what I have planned, but I can a sure you I’ll be cooking or baking today! Since the weather has been crappy just about everywhere, I was in desperate need of some sunshine. Since I don’t know the, how to make the sun come out dance, I figured I would make something that was bright and cheery. So today I have for you my Topical Fruit Smoothie!
Oh this smoothie is so simple to make and so tasty. It’s thick, sweet, with a hint of coconut and pineapple. I used Trader Joe’s frozen tropical fruit to make the smoothie. I like the mix, it gives you big pieces of pineapple, strawberries, mango, and banana. It’s really good! Next time you’re at TJ’s, you should check it out.
I blended this bad boy with two other ingredients, Trader Joe’s unsweetened coconut milk, which you can get in the section with the almond and soy milk. It’s only 50 calories a cup. I also used a pinch of coconut extract to give it a tropical flair. I love extracts because they don’t contain hardly, if any calories and a little bit goes a long way.
For a little treat at the bottom of the glass I popped a maraschino cherry on top. I love those little cherries and I could so eat a whole jar of it, but I don’t, but I could.
- 1 cup Tropical Fruit Blend (I used Trader Joe's)
- 1 cup Unsweetened Coconut Milk from carton
- ¼ tsp. stevia (optional)
- ¼ tsp. coconut extract
- 4 ice cubes
- Place all ingredients in a blender and process until smooth
This smoothie put me a great mood. Now I feel I can conquer the world. Ok, maybe just conquer the laundry, but hey it’s something. Stay tuned tomorrow for a healthy recipe and an awesome giveaway!

Smoothies are my favorite! I have been relying on them for a little sunshine too. But I’m starting to need the real thing. I also love TJs coconut milk. I used it in a smoothie yesterday and made oatmeal with it this morning. Tomorrow it will be that with granola.

This looks delicious. I recently won a blender in a raffle so I’m going to go on a massive smoothie kick! I’m only sad that I’m going to have to work out my own frozen fruit. I wish I’d known about this recipe when I was living in America, and right opposite a Trader Joe’s. I miss their products.

I know I lived in california and then moved back to Buffalo for a year and they didn’t have a Trader Joe’s. It was so hard! I love being back in CA because i have a TJ’s right up the street. TJ’s was one of the reasons why we bought the house where we did! I needed one close by! 🙂
