Left Over Pumpkin Pie Smoothie

Happy Black Friday to you!  Are you planning on hitting the stores, fighting the crowds or are you going to stay in and shop online or just enjoy the day free of shopping?  Well either way I have a recipe that will get you going. I know you dedicated Black Friday shoppers rush out the door without eating!  Well I have the quickest smoothie you can make and takes less than 5 minutes to make.  Left me share with you my Leftover Pumpkin Pie Smoothie.

Yup, you read the title to this recipe correct! It’s made from leftover pumpkin pie! I hope you saved at least one piece of pie from Thanksgiving. I came up with this recipe because I wanted to use my leftovers, I wanted something quick, full of flavor and will get my engine running. Plus it’s pumpkin and I LOVE pumpkin smoothies!! How can you not?

To make the smoothie, all I did was remove the crust from my pumpkin pie, which is easy to do, plus it will shave about 100 calories from my smoothie. Most pumpkin pies, no matter what kind you make or buy, it’s about a 100 or so calories for the crust. I added some vanilla greek yogurt for sweetness and protein and coconut milk to make it nice and thick. However you can use any kind of milk you like. I popped it all in a blender and within a minute my smoothie was made. It’s so good!! It’s sweet, creamy tastes just like pumpkin pie and it’s very filling!! This is a smoothie to please all pumpkin pie lovers, after all it’s made from a real slice of pumpkin pie. Make it and have fun with it!!! Just don’t forget your dollop of whip cream after all pumpkin pie isn’t the same without whip cream! 🙂

A creamy, sweet drink that is made with a slice of pumpkin pie, greek yogurt, coconut milk and a dash of cinnamon. The perfect use for leftover pumpkin pie!
Serves: 1¾ cups
Ingredients
  • 1 slice pumpkin pie, crust removed
  • 1 cup unsweetened coconut milk or milk of choice
  • 6 oz vanilla greek yogurt, 0% fat
  • 1 dash cinnamon
Instructions
  1. Add all ingredients in a blender and process until smooth.

Well you think I lost it with today’s recipe don’t you? I just like to have fun and try new odd things! 🙂 Well today I will be heading into the crowds, as I was typing this I found out I’ll be meeting Jenny and we shall be doing some Christmas shopping and maybe catch a movie?
