Hi Everyone!
Happy Monday to you and welcome to Crocktoberfest!! This week we have you covered for breakfast, dinner and dessert with everything made in a Crockpot!! Nothing like whipping together a fast meal in a Crockpot and then coming home from work or as in today’s recipe, waking up to an already cooked meal!! I just love my Crockpot and I don’t use it nearly enough!! I am happy to say I have teamed up with some fabulous bloggers to show you our best Crockpot recipes! So to get the ball rolling today’s theme is breakfast! I don’t normally make breakfast in a Crockpot because when I wake up I normally don’t know what to make, but today’s recipe was a treat to wake up and oh the smell of cinnamon and pumpkin slow cooking away in the kitchen, is simply incredible!
Today I have made slow cooked pumpkin oatmeal in a Crockpot. Have you ever made oatmeal in a Crockpot? Oh my gosh you are missing out if you haven’t! It is the creamiest, thickest, richest oatmeal ever. My recipe today is made with pumpkin, cinnamon, pumpkin spice and vanilla. For the oatmeal I used Coaches Oats, but steelcut oats is also amazing in the Crockpot.
The oatmeal tastes like a thick hearty pumpkin pie!! When I served it I added some dried cranberries and chopped pecans and for a bonus treat I put in the middle of the oatmeal, a swirl of maple syrup and a pat of butter. Oh my gosh it is amazing!!! I’m telling you if you like pumpkin, you must make this oatmeal!!! It’s some serious ribbing sticking stuff that will keep you full for hours!!
My Husband couldn’t resist the smell of cinnamon and pumpkin and he actually asked for a bowl. He loved it, which is kind of shocking to me, since he isn’t the biggest pumpkin fan. But he did tell me, he is starting to get sick of pumpkin. Sorry honey, I have lots more pumpkin recipes ahead and pumpkin season has just begun! I also made a cup full for Jenny to take to work. She never has time to eat with the family! 🙁 But I did get a text message from her when she was at work. Here is what she said.

I wanted to let you know the best way to make oatmeal in a Crockpot is by setting another bowl in the Crockpot and placing your ingredients in it. Then carefully filling the sides of the Crockpot with water. Doing it this way will prevent the oatmeal from burning or sticking to the sides of your bowl. I had no mess, no burns and no crispy oatmeal. It was simply perfect!!
- 1 cup Coach's Oats or steel cut oats
- 1 cup pumpkin puree (not pie filling)
- 3 cups water
- 2 tsp. vanilla extract
- ½ tsp. pumpkin pie spice
- ½ tsp. cinnamon, ground
- 1 tsp stevia (to taste), optional
- 1 pinch salt
- In a bowl that will fit in your crockpot, add all of your ingredients and stir. Place the bowl in the crockpot and than fill the crockpot with water until the water comes up at least half way of the inner bowl. Set the your crockpot on low for 6 - 8 hours.
- Serve with brown sugar, maple syrup, pat of butter, cranberries, pumpkin seeds, or nuts.
I am loving Crockpot week! It really made my life easier cooking this way and nothing beats a nice homemade slow cooked meal!
I can’t wait to see what the others have made, then I can try them out this week! I love breakfast and having it ready for me before I go to work is just plain old awesome!
