Tropical Shrimp Salad with Pineapple Mango Dressing

Hi Everyone,

I have to ask you, do you have a nosey dog?  I do!  We have the standard wooden fence that surrounds our backyard and there are a few knots in it, and those knots have a tiny peep-hole.  Well I keep catching my dog looking through the peep-hole with his one eye.  Yup, in one eye!  He loves to watch our neighbors.  He’s so weird!  I keep telling him to stop being so nosey and he just looks at me.  Does your dog do goofy things like that?   I just shake my head, thinking what a weirdo!  Well anyway, on to today’s recipe.  I have been on a major tropical food kick lately and as I think about it, I was this way last year too!  I guess I am just ready for summer!

I was at Whole Foods last week and they had shrimp for $6.99 a pound and I couldn’t resist that price.  I normally pay $12.99 a pound, so this was a deal.  I spent a couple of days debating on what to make with it, and then on Sunday I was craving a big, light tropical salad.  I think I crave salad every Sunday? Probably because I weigh myself on Mondays?  So I whipped together this Tropical Shrimp Salad in a matter of minutes.


The salad is full of fresh papaya, mango, pineapple, avocado, cucumber, tomatoes, sweet bell peppers, scallions and of course shrimp.  This was the first time I ever bought a papaya and I thought it would be perfect with my shrimp.  Since I had left over fruit, I cut it all up and put it in freezer bags for smoothies!  Yum!  I never waste anything!!   That was my New Years resolution!  I got so sick and tired of wasting food an money, and I have to say, I’ve been doing a pretty good job at not wasting any!

The dressing is very simple and contains no oil.  It’s made with the pineapple and mango from the salad and I added just a pinch of sugar for sweetness.  It’s thick, slightly tangy and sweet.  It is a perfect companion to this salad!  I really enjoy salad dressings made with fresh fruit.  It’s low-calorie, no fat and nothing beats fresh!!  The salad in general is a light, slightly sweet and has a tad pinch of creaminess from the avocado.  It was perfect!  All I needed was a pina colada to go with it.  Maybe next time!

Tropical Shrimp Salad

A light, healthy, sweet salad made with fresh tropical fruit and shrimp.
Serves: 2 Large Salads
Ingredients
  • **For Salad**
  • ½ cup papaya, diced
  • ½ cup mango, diced
  • ½ cup pineapple, diced
  • ⅓ cup avocado, diced
  • ½ cup tomato, diced
  • ½ cup cucumber, diced
  • ½ cup sweet bell pepper, diced
  • 2 tbsp. scallions, chopped
  • 6 oz shrimp, cooked
  • **Pineapple Mango Dressing**
  • ½ cup mango
  • ½ cup pineapple
  • 1 tsp dijon mustard
  • 2 tbsp. red wine vinegar
  • 2 tsp lime juice
  • 1 tsp dijon mustard
  • ¼ tsp salt
  • ½ tsp pepper
  • 1 dash sugar, to tast
Instructions
  1. In a blender or small food processor add all of the ingredients to the dressing. Process until smooth. This will be a thick dressing.
  2. On two plates, evenly divided the salad ingredients and top with Pineapple Mango Dressing.
