Carrot and Pineapple Smoothie

Hi Everyone,

Happy Monday to you!  This week is a short week for me, and I LOVE it!  We do not get to many holidays off, but we do have Good Friday off and it will be a good Friday!  Next week I am going to Monterrey for work and I think I’ll be spending my Good Friday doing a little shopping.  I am in dire need of some capri’s and spring shirts.   Since last week I have been having fun with Smoothie Monday’s so today I have another smoothie for you today.  I figured we better start the week off on a good foot or a nice rabbit hop!  🙂

I thought since this is Easter week that I would theme today’s smoothie after next weekends holiday.  If you don’t celebrate Easter, that’s ok too, you can still have a nice healthy smoothie that is light, filling, sweet and has a little bit of a tropical flair!


I actually based this smoothie off of  a Carrot Cake which I have been craving, but this doesn’t taste like carrot cake, it has more of a tropical taste to it do to the sweetness of the carrot juice and the pineapple.  It’s very good!  I picked up some fresh carrot juice from Trader Joe’s which was really tasty.  I never had carrot juice before and I was impressed on how it tasted and how sweet it is.  For my the milk, my Husband out of all people, found Dream Blends Almond, Cashew and Hazelnut Drink.  I didn’t find that it had to much of a nut taste, but that could be because I’m still fighting off this cold.   This drink will help with my cold too!  It has 110% vitamin C!

This drink is perfect for a pick me up, a good dose of vitamins, which I’ll share with you in the recipe section  and perfect for when you’re in need of a nice drink to cool you off.

Carrot and Pineapple Smoothie

A light, healthy, refreshing frozen drink that is sweetened by pineapple and fresh carrot juice.
Serves: 2 Cups
Ingredients
  • ½ cup carrot juice
  • 1 cup pineapple, frozen
  • ½ cup Almond, Cashew Hazelnut Drink (or milk of choice)
  • ⅛ tsp cinnamon, ground
  • ½ cup ice
Instructions
  1. Add all ingredients in a blender, process until smooth.
