Chocolate Covered Strawberries

Hi Everyone,

I have a delectably sweet treat that you simply can’t resist!  It screams Valentine’s Day!!

I honestly couldn’t think of a more romantic treat than chocolate covered strawberries!!  You would think something so romantic would be difficult or complex, but no, not these treats.  Who can resists a  juicy, sweet strawberry dipped in dark chocolate and drizzled with white chocolate.  I honestly forget how much I love them until I had one.

The key to making these fabulously delicious strawberries is making sure your strawberry is dry and you do NOT get any water in the chocolate.  One single drop of water hits the chocolate, it’s all over!  The chocolate will seize up and you have wasted all that wonderful chocolate.   That would be a crime to waste chocolate!

Another thing about chocolate covered strawberries is that once you have dipped your strawberries, refrigerate them for 15 minutes for the chocolate to harden.  Don’t leave them in there too much longer or they will form condensation.  Then your ready for the white chocolate drizzle if you prefer.  Then refrigerate again for 15 minutes.  These are really quick to make too!  I made 20 chocolate dipped strawberries in about 10 minutes.

For storing the chocolate covered strawberries, you can leave them loosely covered in a cool place in your home and serve within a few hours.  Here are some directions that I got from eHow.

Chocolate Covered Strawberries
Prep time
Total time
Sweet, juicy strawberries dipped in dark chocolate and drizzled in white chocolate.
Serves: 20 Strawberries
  • 21 Large Strawberries (about 1 lbs)
  • 6 oz dark or milk chocolate
  • 2 tbsp. white chocolate (optional)
  1. Wash and dry your strawberries thoroughly. Be sure they are completely dried and at room temperature. If any water touches the chocolate, it will seize the chocolate.
  2. Line a baking sheet or plate with parchment or wax paper; set a side.
  3. Create a double boiler if you do not have one; by filling a pot partially with water and placing a glass heat proof bowl over top the pot. I used a pyrex bowl. Just be sure the bowl does not touch the water.
  4. Place dark chocolate in bowl, and stir occasionally until melted. Grab the strawberries by the stem, and dip into the chocolate. Allow excess to chocolate to drip off, then turn the berry upside down for a few seconds to set.
  5. Place berries onto prepared parchment paper. Once all of your strawberries are dipped, place in the refrigerator for 15 minutes, until chocolate hardens.
  6. To create a white chocolate drizzle; melt the white chocolate the same way as the dark; once it's melted, carefully scoop the chocolate into a sandwich baggie. Cut a corner of the baggie and drizzle over chocolate strawberries. NOTE: Make sure no water gets into the baggie, otherwise your chocolate will seize up. (I did that when I was scooping the white chocolate!)

One more thing I wanted to tell you, is that you should use a good chocolate.  Personally I love Trader Joe’s Chocolate Pounder Bars.  The chocolate melts so nicely.  You could also melt the chocolate in the microwave, but to be honest, I’m not that good at that!  I always over cook my chocolate.  Nothing worse than burnt chocolate!

I hope you enjoyed today’s treat!  It was one that has been on my food bucket list since last Valentine’s Day!  I am happy to share it with you today!

Since I am writing this in advance, I almost forgot today is Little Jenny’s 21st birthday!  I want to wish Jenny a wonderful birthday!  I hope you are having fun and winning big in Vegas!!  You have grown into quite a young woman and I am very proud of you!  Even though you are not my daughter, you are still like one to me!  Happy Birthday!  Love ya!  Jen

To everyone else!  Have a great day!
