Today I have for you a chocolaty treat that would be fantastic for a little splurge or to make for Valentine’s Day! Yup, already thinking Valentines Day!! It’s never to early for chocolate and flowers!! Hint, hint Husband if your reading this!!
These are my little Chocolate Mocha Mini Cakes. They are a cross between chocolate cake and a chocolate muffin! They are super moist and have a hint of coffee. I am so loving these!! I gave one to my Husband, hot out of the oven and one to Little Jenny and I got great reviews. I was told they are moist, chocolaty and they loved the little bits of chocolate in them! I normally make breads on the weekend, but I decided on muffins instead! Then when I took a bite of these bad boys, I realized they tasted more like cake! Love it!!
To keep the calories low I used Chocolate Coffee Greek Yogurt and applesauce, but I really wanted a moist cake/muffin so I did add a little bit of canola oil!! It worked out superbly Then when I was mixing the batter, I was thinking I need more chocolate, more I tell ya, so I chopped up some dark chocolate that I had in a bar form and through that in too!! I think I made the right decision! Chocolate and coffee together is such a wonderful combo!! Plus for some reason, coffee really brings out the taste of chocolate. Hmmm, that could just be me though?
I got this little gift set of paper bakeware from Welcome Home Brands to try out to see if I liked them. I never baked with any kind of paperware before, but I have seen them in stores. I was curious, so I decided to give them a try. The package said no spraying, no tins needed. Just add your batter and bake. Hmmm, simple enough! So I poured in my chocolate batter and baked these for 20 minutes and they came out looking good!!
But I figured the real test would be the peeling of the paper bakeware. Huh, to my surprise they peeled nicely!! My cake stayed in perfect shape!
When I originally decided to make these muffins, I was planning on 12 standard sizes, but these muffin cups are more of a jumbo size. So instead of 12 I got 8, which is fine by me! If you do decide to make these little cakes, you will get 12 standard muffin cup size.
In my little gift set, I also got cake rounds, mini bread loaf pans and regular loaf pans. These will come in handy for gift giving and you know what? They freeze nicely too, which is perfect for Hubby’s lunch. If you interested in Welcome Home Brand Paper Bakeware you can check out there website to see the different colors they have. - 1 6oz container Chobani Chocolate Coffee Greek Yogurt
- ½ cup unsweetened applesauce
- ½ cup granulated sugar
- 3 egg whites
- 1 tbsp vanilla extract
- 1 tbsp. espresso powder
- 1 tbsp water
- 2 tbsp. canola oil
- 1 cup whole wheat pastry flour
- ½ cup unsweetened cocoa powder
- ½ tsp. baking powder
- 2 tsp. baking soda
- ½ tsp. salt
- 3 squares Ghirardelli Dark Chocolate, chopped (38 grams)
- Preheat oven to 350°
- Add paper muffin cups to a muffin tin or spray a muffin tin with cooking spray; set a side.
- In a medium bowl, mix yogurt, applesauce and sugar; until combined. Add eggs, vanilla extract, espresso powder, water'and canola oil, combine until blended.
- In a separate bowl add flour, cocoa powder, baking powder, baking soda sand salt. Mix together.
- Add flour mixture to yogurt mixture and mix until combined.
- Fold in chocolate.
- Scoop batter into prepared baking cups.
- Bake for 15 - 20 minutes. Insert a toothpick, if it comes out clean muffins are done.

I have to say they are cute little cakes! They would also be good warmed up with a small pinch of vanilla ice cream! Yum!!
