Cranberry Orange White Chocolate Chip Cookies

Hi, Everyone!

Today I have for you one of my favorite cookies.  Now it’s not low calorie, but I really do try whenever I make cookies.  My philosophy is if there are chocolate chips in it, then cut back on the sugar and chips and that is exactly what I did in this recipe.  Plus I used whole wheat pastry flour for a little added fiber.

These are my Cranberry Orange White Chocolate Chip Cookies.  They are crisp, sweet and have the most wonderful orange flavor.  Every bite you get a wonderful sweetness and the orange extract take the cookies up to another level.  I simply love them.  Out of all the batches of cookies I made this past weekend, these were the first to go!!!


The first day they are really soft, but by the second day they have a nice crunch to them.  I tend to like crunchy cookies and I’m pretty impressed how flat and crunchy they are considering I didn’t use shortening, just butter.  They are also a very light cookie and you can so eat more than one, which is the hard part.  These cookies come in at just under a hundred calories.  I know, I know I should have made them less calories but I couldn’t because I wanted the ultimate cranberry cookie and these cookies satisfy everything I look for in a cookie!   That’s why I only make them once a year!!

One thing I really love this time of year is the combination of a tart cranberry with the sweetness of white chocolate.  They are a perfect complement to each other.  However if you don’t like cranberries or you don’t have any, dried cherries would be wonderful in this recipe too!!  The picture below is funny looking to me.  The cranberry really pops out and it looks like an eye watching you!  You just watch me eat him!

Cranberry Orange White Chocolate Chip Cookies

A sweet crisp cookie made with cranberries and white chocolate chips.
Serves: 30 Cookies
Ingredients
  • ½ cup butter, softened
  • ½ cup light brown sugar
  • ½ cup granulated sugar
  • ¼ cup egg substitute or 1 egg
  • 1 tsp. vanilla extract
  • ¼ tsp. orange extract
  • 1¼ cup white whole wheat flour
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ½ cup white chocolate chip
  • ½ cup dried cranberries
Instructions
  1. Preheat oven to 375F
  2. In a bowl add flours, baking powder, baking soda and salt, set a side.
  3. In large bowl, cream butter, sugar and brown sugar until light. Beat in egg, vanilla extract and orange extract until smooth. Gradually add flour mixture until combined. Stir in white chocolate chips and cranberries.
  4. Drop by well rounded teaspoons onto ungreased cookie sheets. Bake 8 - 10 minutes until golden brown.

For storage of cookies, place parchment paper between them and seal in a container for up to 3 days. They can placed in the freezer for up to 3 months! Leave on the counter to defrost!

These cookies are really an indulgent and for a special treat or for gift giving.  I know they are not low in calories but honestly they are so good they are worth it!  At least in my book!  I promise my next cookie recipe will be lower in calories and a little bit on the healthier side!  But like I said, I couldn’t resist making them or sharing them with you because I really love them!

Tonight we are having our annual Christmas party at work and I can guarantee tomorrow will be eat extremely healthy day, plus lots of exercise!  One thing I know about the boss’s party is that the food is amazing and besides appetizers and wine, my boss’s wife makes a 5 course meal and it would be so rude not to eat it all!!  This Friday I will be on the clean plate club!
