Broccoli and Cheese Egg Bake

Hello and how do you do?

Today I have for you my Cheesy Broccoli Egg Bake.

I made this on Sunday morning!  After all that baking I did I was craving something a little more on the savory side that was filled with protein and not sweet!  This breakfast bake did it for me!  It’s cheesy, filled with broccoli and spinach and it’s very filling!!  I haven’t made I an egg bake in so long, I don’t understand why?  This would also make for a fabulous dinner one night!!


I have to admit its kind of funny looking with the spinach sticking out of it, but don’t let that fool you, it tastes might good!!  It’s oohhy gooey and chock full of broccoli!  I got the idea for this because I wanted to make broccoli and cheese soup for dinner that night and then I thought hmmm, I bet broccoli would be good with eggs, and it was!!  This may sound weird but the past few days I have been having brussel sprouts and egg whites for breakfast and that was really good too!!  Vegetables and eggs make a wonderful combination.

Broccoli and Cheese Egg Bake

An oohey gooey savory egg bake full of broccoli, spinach and cheese.
Serves: 1 Egg Bake
Ingredients
  • 1 cup broccoli, fresh, chopped
  • 1 handful spinach, torn
  • ¾ cup egg substitute or three eggs
  • 2 tbsp. milk, non-fat
  • ½ oz shredded lite cheese
  • 1 dash onion powder
  • 1 dash garlic powder
  • 1 dash of black pepper
  • cooking spray
Instructions
  1. Preheat oven to 350 F
  2. In a 10 oz ramekin or oven safe baking dish, spray with cooking spray.
  3. Add broccoli and spinach into prepared baking dish.
  4. In a small bowl add eggs, milk, cheese and seasonings. Stir until combined.
  5. Pour egg mixture over broccoli
  6. Bake for 30 minutes or until center of eggs is firm.

I have also made a few other egg bakes that I love!  I can’t pick one I like the best because it all depends on my mood that morning or what I have for leftovers from the night before!
