Hello Everyone,
Yah, yah I’m early with today’s recipe, but I just wanted to share it with you! I know I’m rushing things, but I’m really not!! I just love Christmasy type foods and the weather was cool, but not cold so I thought this would be a great time to share with you my Gingerbread Frappe.
This drink is wonderful, refreshing and a tad bit spicy, yet it tastes like gingerbread cookies! The ingredient that made it give it, its taste is the molasses in it. I didn’t use a lot but I found a teaspoon of it made the drink!! Yummy!!
Honestly, I’m not a huge Gingerbread person, yet I do love this drink! The added whip cream on top gave it a sweet dessert like taste that I felt complimented the spice! Oh and I included the whip cream in my calories! 😉 The calories for this drink is only 69! Not to shabby!! The recipe should make about 2 cups, yet I used xanthan gum in it and because it’s a thickener, it made it more like 5 cups!! I thought the top of my blender was going to explode because the drink got bigger and bigger! But with xanthan gum it makes it enough to share and to cut the calories in half. But between you and me, I don’t think you will want to share this drink.
- 1½ cups coffee, partially frozen
- ½ cup non-fat milk
- ½ tsp. nutmeg
- ½ tsp. cinnamon
- ¼ tsp. ginger, ground
- 1 dash cloves ground
- ¼. tsp. vanilla extract
- 1 tsp. molasses
- ½ tsp. stevia or sugar to taste
- ⅛ tsp. xanthan gum (optional)
- 2 tbsp. whip cream, fat free
- In a blender add all ingredients, except for whip cream. Mix until smooth.
- Pour into a cup and top with whip cream and a sprinkle of cinnamon
Sorry I rushed the holiday season, but with cooler weather in the air, Christmas trees up already at the stores, I figured why not!!! It’s never to early to drink your cookies!! Don’t worry I’ll be back tomorrow with a new fall recipe!!
Have a great day!
Toodles,
Jennifer
