Apple and Cranberry Quinoa Salad

This Sunday I did my big batch cooking and I decided to make a big batch of quinoa for easy side dishes and salads.  Since my Husband wasn’t home Sunday night, I decided to whip up a quick quinoa salad for dinner.

Making a big batch of quinoa ahead of time made for a super quick dinner!  All I did was chop up an apple, threw in some dried cranberries, already cooked chicken, placed it on a bed of arugula and topped it with crumbled goat cheese and balsamic dressing!  All I can say is it was yummy!!!  Sometimes I have a hard time describing food, all I can tell you is I like it!!  The best description I can give is it’s a light meal, filling and the combination of the apples, cranberries and goat cheese really make this salad.  I wasn’t sure about arugula, but it was perfect because it’s a little peppery.  I really like this salad and will probably be eating it again this week.  It is really is filling!!!  Perfect dinner for one!  Oh and adding onion or walnuts would be a perfect touch to the salad!  I was just to lazy to saute up some onions!

Since I did make a big batch of quinoa, you’ll probably get a few more recipes this week!  I hope you don’t mind!  Making a big batch of quinoa will last in the refrigerator for about 5 days.  I made mine with just water because I don’t know what I am going to use it for.  I do like to put it in my breakfast jar, in place of overnight oatmeal, which is what I will be having for breakfast tomorrow.  I just add yogurt, quinoa and berries oh and peanut butter of course!  Perfect, healthy breakfast!!

Apple and Cranberry Quinoa Salad

Apple and Cranberry Quinoa Salad

A sweet and savory salad made with quinoa, apples, cranberries and topped with crumbled goat cheese.

Ingredients

  1. 3 Tbs. (35 grams) apple, diced
  2. 1/4 tsp lemon juice
  3. 1 tbsp dried cranberries
  4. 3 oz chicken, cooked, diced
  5. 1/2 cup quinoa, cooked
  6. 2 tbsp. balsamic dressing, fat free
  7. 1/2 oz goat cheese, crumbled
  8. 2 cups arugula

Instructions

  1. In a small bowl add apple, lemon juice, cranberries, chicken, quinoa and 1 tablespoon of dressing. Mix until combined.
  2. On a plate add arugula, top with quinoa mixture. goat cheese and remaining 1 tablespoon of balsamic salad dressing.

  2. Mmmmm….what a tasty entree salad! I love the idea of adding apples and dried cranberries to quiona. And topping with chicken is an excellent addition, too :)
