Tomato Pizza Pie

Hi Everyone,

One thing about Friday nights, is that it should be take out night.  You know celebrate the night with burritos, Chinese or pizza.  Well I really debated about ordering take out or making homemade burritos, but I was really craving the pizza!  I thought for sure that I will order a pizza, but I know I have no control, and I’ll eat, eat, and eat until I can’t move.  I love pizza too much, it’s one of my trigger foods.  I think it’s because of the crust.  So I thought what can I do to get pizza and not be so overly crazy in calories?  The image of my Husband walking into the house with a basket of tomatoes, telling me to use them up was in my head.  Hmmm, pizza, hmmm, tomatoes.  Ahhhh, a tomato pizza!!

Then I thought, but I don’t have a crust and that means I have to make one.  I’m to lazy for that and I want dinner now, not in a couple of hours.  So I opened my refrigerator and there was a lonely pie crust begging to be used.  Really it was, it has been sitting in the fridge for like 4 months or longer.  I thought, BINGO!!  I’ll use the pie crust to make a pizza!!  Oh Baby, was that a great idea!!


Let me tell you this tasted amazing!!!!!!!  So good that my Husband, the meat eater, ate half the pie and shhhhh, I ate half too!!  I couldn’t help it, it was so good!  Nothing like fresh tomatoes from the garden, fresh basil and cheese.  Holy Moly!!  The flavor was unbelievable.  I can’t believe my Husband loved it!  He went up and got three servings!!!

Now I’ll be honest with you, this pie did taste amazing, but it was a little bit watery.  But if you can live with it being a little thin on the sauce, then this pie is for you.  We didn’t care!  We just piled it on our plate and ate away and away!!!  However, maybe if I let it sit out longer it would have thicken up like lasagna does. The aroma of the pie was making me hungry and I just wanted to snap my pictures and eat!!!

The pie took about 24 minutes to cook and about 6 minutes to prepare.  Not to shabby for homemade pizza.  I guess you could consider this a deep dish pizza.  As I’m writing this, I really can’t believe my Husband loved it!!  I’m telling you if you have some fresh tomatoes, you must make this pizza!!!  You could even add other veggies to it, but I felt I would be pushing my luck with my Husband by adding peppers, onions and zucchini.  I can’t believe he didn’t even mind the spinach in it.  Yes my Friends, this is one dinner I am proud of!!

The serving for this pie is 4 people, meaning you get to eat a quarter of the pie.  The calories for this delicious tomato pizza is only 329 calories per serving.  Nice!  Now this isn’t completely healthy, after all I used a pie crust, but it’s better than the pizza parlor and to be honest this is one of the best homemade pizzas I have had!!  Little Jenny works at Round Table Pizza, and I have to tell her that I prefer my pie over Round Table!  🙂

A deep dish pizza, made with fresh tomatoes and basil, topped with mozzarella cheese.
Serves: 8 slices
Ingredients
  • 1 12" pie crust (I used Pillsbury)
  • 3 medium tomatoes, sliced
  • 6 plum tomatoes, sliced
  • 10 basil leaves, sliced, divided
  • ½ tsp. oregano, divided
  • 2 cups spinach, fresh, torn
  • 2 cups pasta sauce or pizza sauce Save Now
  • 1 cup mozzarella cheese, lite shredded
Instructions
  1. Preheat oven to 450 degrees
  2. Line the pie plate with your pie crust. Add one layer of tomatoes, sprinkle with ¼ tsp oregano, 5 basil leaves, 2 cups of spinach.
  3. Create second layer by adding remaining tomatoes, sprinkle with oregano, and remaining basil leaves.
  4. Pour pasta sauce over the tomatoes and evenly spread with the back of a spoon. Top with mozzarella cheese.
  5. Bake in oven for 20 - 25 minutes or until cheese is melted and crust is lightly golden.
